Chocolate Mint Cookies I

Reviewed: Dec. 11, 2006
Great taste - very brownie-like. However, they rose very high in the oven, but when removed, they flattened to almost nothing. (I may try a bit more flour next time.) I used junior mints, which looked terrible when spread, so I just pushed it into the cookie and left it like that. This made a lot of cookies! Thanks for sharing.

Marshmallow Brownies

Reviewed: Nov. 30, 2006
I was looking to spruce up a boxed brownie mix and found this recipe. Even though I totally changed it, I still give it 5 stars for giving me the idea! I used a boxed brownie mix in a 13x9 pan, added the butterscotch chips and marshmallows to the prepared mix, spread in the pan and baked for about 30 minutes. The marshmallows did "rise" to the top of the pan, but it looks so pretty and tastes wonderful! The marshmallows got nice and soft and gooey and the chips make a great addition to the boxed mix. Thanks for the idea!

Banana Cream Pie III

Reviewed: Oct. 11, 2006
I used a pre-made graham cracker crumb pie shell and a pre-made oreo cookie pie shell. Put bananas in one and strawberries in the other. Used one box vanilla pudding and one box banana cream pudding mix. Used low-fat whipped topping and fat free milk. Also topped with a few strawberries and bananas on top of the whipped cream. Yum, yum. (By the way, you don't HAVE to wait four hours to eat this!)

Grandma Johnson's Scones

Reviewed: Oct. 7, 2006
These were just okay for me - didn't taste as much like a scone as I thought they would. More like a biscuit.

Brown Sugar Meatloaf

Reviewed: Oct. 7, 2006
I only used about half the milk and also used italian bread crumbs instead of the crackers. I put a little bit of the ketchup/brown sugar mixture on the bottom of the pan and spread the rest on top of the meatloaf. Next time I think I'll put it all on top, as it just kinda spread out over the pan (I used a round stoneware pan and flatten the meatloaf out so it will cook quicker. I loved the hint of ginger in the meatloaf. Thanks for sharing!

Souvlaki

Reviewed: Oct. 1, 2006
I didn't use any peppers, cause I didn't have them, I cut up the onions quite finely, and I used a thick cut pork chop cut up. Marinated it for about 5-6 hours and cooked them on my grill on top of my stove. Very tender meat and very flavorable. Cooked the small pieces of onion alongside the meat and served them inside pitas with lettuce and tzaziki sauce. This was SO good! Thanks for sharing.

Baked Potato Soup V

Reviewed: Sep. 24, 2006
Excellent soup. I used non-fat milk, lower fat cheese and light sour cream. And I kept adding milk to it to thin it out during cooking (definitely no need for whole milk.) I added more black pepper, no salt (didn't need it) and used real bacon pieces. I also cut up about half the potatoes into chunks and the rest I chopped more finely. Thanks so much for sharing this recipe! It's a keeper.

Cream Filled Cupcakes

Reviewed: Sep. 21, 2006
This filling was great. I wasn't sure how long to beat it for until it got light and fluffy enough, but 3-4 minutes seemed to be enough. I did use another cake recipe from this site (boxed chocolate cake mix with pudding mix, etc.) I thought at first the filling would be too sweet, but mixed into the cupcakes, it was perfect. I also filled from the top - I liked the little dot of filling that showed up on top of the cupcake so you know it was filled with something. Thanks for the recipe!

Lemonade Cake III

Reviewed: Aug. 21, 2006
Wow - this was SO good! The only change I made was to use confectioners sugar with the lemonade concentrate. The cake was very lemony and extremely moist and everyone loved it. Will definitely make again. Thanks for sharing!

Best Carrot Cake Ever

Reviewed: Aug. 21, 2006
This was so good. I wasn't sure why I had to marinate the carrots in the brown sugar at first, but then realized that it made a kind of "juice." I left out the nuts, added more cinnamon and a bit of pumpkin pie spice, left a little of the pineapple juice in, and baked as cupcakes. Got great reviews from the entire family at a party. Will definitely make again. Thanks for sharing!

Spicy Grilled Chicken

Reviewed: Aug. 18, 2006
Very good marinade for chicken. I ended up marinating two boneless chicken breasts and two thighs for almost 2 days, as I didn't cook it the first night I thought I was going to. It turned out so good and tasty. The only change I made was to leave out the salt. Might try a bit more red pepper flakes next time. Thanks for sharing!

Marzetti® Coconut Breaded Chicken with Crunchy Fruit Sauce

Reviewed: Aug. 11, 2006
I liked the idea of coconut on the chicken, which did give it a nice crunch, but this was very sweet, and I didn't care for the taste the marzeti's left on the chicken. Won't be making again.

Melt In Your Mouth Pork Chops

Reviewed: Aug. 10, 2006
I also used low sodium soy sauce and added a few tablespoons of peach and pineapple jam to the mixture. I didn't cook them as long as stated, but the flavor was still very good. Thanks for sharing!

Corn and Zucchini Melody

Reviewed: Jul. 14, 2006
Very good. I was surprised at how much this makes. I used a mexican cheese blend, as that is what I had, and used a bit more black pepper. I also used a few sprays of a non-caloric butter spray that's made for corn on the cob. Thanks for sharing!

Clone of a Cinnabon

Reviewed: Jun. 26, 2006
These were so easy to make and so incredibly addicting. I also don't have a bread machine but did as previous reviewers said and mixed one package of yeast, milk and sugar (I used Splenda) together first and let sit for 10 minutes - then added rest of wet and dry ingredients. I started out mixing the dough with a wooden spoon and then tried using my dough hook on my mixer, but the spoon actually worked out better. I only kneaded it in the bowl for a minute or two by hand and the dough came out perfect. Also mixed the brown sugar, softened butter and cinnamon together first and spread on the dough with a spoon. I used low-fat cream cheese in the frosting too. Very easy, very good and will be making lots of times in the future. For those who say they didn't cook in the middle, I cut mine into one-inch portions and they came out perfect. Thanks for sharing!

Egg and Hash Brown Pie

This was just okay for me - kind of dry and bland, even though I added a bit of sour cream, black pepper and used the southwestern style has browns.

Slow Cooker Lemon Garlic Chicken II

Reviewed: Feb. 19, 2006
This had a great lemony flavor, but I guess that's why its called "lemon garlic chicken!" I cooked mine on low for about 6-7 hours, and it was perfectly done. I used 3 boneless chicken breasts and two thighs with bones. I also added a bit of onion to the crock pot and a bit more black pepper. Served it over rice. I will use the chicken tomorrow to make a pulled chicken barbeque, as it is very tender and will easily shred with a fork. Not ohmygod wonderful, but very nice. Thanks for sharing.

Cola Burgers

Reviewed: Feb. 13, 2006
These were just okay for me. I don't like French dressing, so I used Ranch dressing instead, but everything else stayed the same. I didn't think that flavor was that strong or noticeable, but maybe that's because I didn't use the French dressing! Thanks for sharing.

Baked Potato Soup II

Reviewed: Feb. 11, 2006
This was very easy to make, but I thought rather bland tasting. I added a ton of black pepper, a bit of red pepper flakes and garlic salt. It was very thick, which I like. I did also top with cheddar cheese and bacon bits, as was suggested.

Tantalizingly Tangy Meatloaf

Reviewed: Jan. 30, 2006
Excellent sauce for the meatloaf. I did add ketchup to my meatloaf like I normally do, as well as a bit of onion, but otherwise made the recipe as stated. It made a lot of sauce for my meatloaf, but that was a good thing! Thanks for sharing.
