'Calabacitas Guisada' (Stewed Mexican Zucchini)

An excellent side dish! I substituted a half jar of marinara for the stewed tomatoes just to use it up and to give it an Italian spin for our French bread pizzas. I omitted the cheddar cheese - it was delicious without it.

Slow Cooker Buffalo Chicken Sandwiches

I used frozen chicken breasts and omitted the butter. It made for a solid buffalo chicken sandwich. I was expecting my kids to rave about it, but they didn't, which is why I'm not giving 5 stars.

Creamy Horseradish Garlic Spread

I made this to accompany fried zucchini and it was fantastic! It also went well with a grilled sirloin and as a baked potato topper. After making this a couple of times, I've decided to nix the white pepper altogether and increase the amount of horseradish. Plus going forward I'll only use an increased amount of garlic powder instead of both fresh minced garlic and garlic powder. I've learned that while I love garlic, I'm not a huge fan of raw garlic.

Salisbury Steak with Mushrooms

A very nice Salisbury Steak recipe. I took the suggestion to season it up a bit by using seasoned bread crumbs, 1T. Dale's Steak Seasoning, and 1/2T. Worcestershire Sauce, but then omitting the 1 t. salt. The patties needed longer than 10 minutes to cook through and it took several minutes of boiling the onion/mushroom mixture in order for the mushrooms to cook before adding the cornstarch/water. We served this with egg noodles, peas & carrots, and crescent rolls. A nice comforting dinner on a cold late-March day.

Grilled Chicken with Peach Sauce

Made this exactly as written, but without grilling any peaches with the reserved sauce because peaches aren't in season right now. But we loved the peach sauce on the grilled chicken breasts! Thank you for a keeper recipe!

Scrumptious Salmon Cakes

My husband loved them, but I thought it was way too heavy on the Worcestershire sauce; it dwarfed the taste of the salmon. Next time I'll try it with 2 T. instead of 3 T. We subbed yellow onion for the green onion.

Cream Peas

Loved this! I used just a tad less butter and sugar than the recipe called for. I also forgot to thaw my peas beforehand, but that wasn't a big deal . . . I just boiled them a little longer.

Waldorf Salad II

Thank you for the receipe. The dressing proportion to fruit and celery is nice . . . not too mayonnaisey, as some can be. I had to omit the walnuts this time, but I look forward to that addition next time I make this.

Bread Pudding II

Great way to use up that leftover eggnog as you wind down the Christmas season. Used a full quart of eggnog, so I cut the sugar to 1 cup. I also used a loaf of sweet Italian bread in place of white bread. Served it with Cool Whip and Breyer's caramel sauce. Delish!

Jet Swirl Pizza Appetizers

Yum! Served this with homemade pizza sauce - blend a 28 oz can of whole tomatoes to a puree, then blend in 2 cloves minced garlic, 1 1/2 t. salt, and 1/4 cup olive oil.

Creamy Italian Dressing II

Honey Nutters

I remember these! However, I think the last time I had them they were marketed under the trade name of "Ganja Balls" and sold in the parking lot of a Grateful Dead concert in the early '90s. Seriously, though, these Honey Nutters are delicious (and can cure a case of the munchies). I made them with chocolate graham crackers. Thanks for the flashback, Johnna Corley!

OU Corn Casserole

If you're wanting cornbread, then don't make this. If you're wanting corn pudding, then don't make this. But if you want something that can best be described as corn casserole, then this is your recipe! This was a very nice side dish to shredded pork bbq and coleslaw. It was pretty sweet . . . maybe Jiffy corn muffin mix has more sugar in it than I thought or maybe Green Giant's canned creamed corn has more sugar than I thought. We will definitely make this again, though. The only change I made was to put this in an 8x8 so that it would be a thicker dish than what would've resulted from a 9x13. Just increase the baking time as needed if you use an 8x8.

Cowboy Mashed Potatoes

I love these mashed potatoes so much because there are so many veggies in them and the potato skins stay on. If you make these and have leftovers, here's a great way to repurpose them: make egg and potato burritos. Fill a large tortilla shell with reheated cowboy mashed potatoes (you may need to add a little milk during the reheating) and scrambled eggs, then fold up the burrito, cover it with warm ranchera sauce and a little cheddar or cotija cheese. Makes for a great and easy dinner!

Easy Honey Mustard Mozzarella Chicken

Omitted bacon. Substituted Dijon for the yellow mustard. Very good chicken dinner. As an alternative, I made another dish and just poured honey mustard salad dressing over the chicken and it was also very good. Kids love it!

A new favorite! Try it with Emeril's marinara - there is a hint of sweetness to it that pairs well with the cheeses. I also used the idea of placing the filling in a Ziploc and snipping off a corner to pipe the filling into the shells. Worked like a charm!
