Shrimp Scampi Bake

I only used 1 T. of dijon mustard and it was plenty; I also added some white wine to the sauce. Easy execution and pretty tasty.

Green Chile Tortilla Scramble

This was a great way to use leftover corn tortillas! I used a pizza cutter to cut the tortillas into strips. Try cotija cheese in place of the cheddar sometime!

Mexican Lasagna Lite

This was excellent. My 7x11 pyrex was filled to the brim . . . so I didn't end up using all of the 2nd can of enchilada sauce and only a little cheese on the top layer. I used a pizza wheel to cut the corn tortillas in half so I could arrange them to fit a bit better than keeping them round. I think I actually used 13 tortillas in total.

Buster Bar Dessert

Extremely rich and wonderful. A small slice is very filling! I thought the fudge sauce was very runny, but it tasted fantastic. Perhaps I should've boiled it longer than 8 minutes? Loved the idea of cutting the box of ice cream open and cutting slices to place on the crust! An 8 oz. container of whipped cream was plenty to cover the peanuts and fudge layer. My 9x13 was full to the brim! I did crush some more oreos to decorate the top. It was an impressive end to our Easter dinner!

Tangy Tuna Black Bean Quesadillas

My family was dreading this dinner . . . "Tuna? In a quesadilla?" But I told them to keep an open mind. And I was quietly skeptical about combining tuna, black beans, and buffalo wing sauce, but it all worked well together and we all enjoyed these immensely. They even asked if we could have this again. Like others, I only used 1 t. garlic salt, instead of 1T. Plenty salty with that substitution. Also, I had not seen refried black beans before, but found Old El Paso at one of the larger grocery stores in the area. Great recipe! Keep an open mind and give it a try!

Artichoke Salsa

Excellent flavor! I was worried that it would be bland based on some reviews, but this was delicious. I served it with pita chips. The only substitution I made was using 1 t. dried basil in place of 2T. fresh basil.

White Balsamic Vinaigrette

Not a ton of flavor, but if you are using it in salad with strong components (red onion, black olives, pepperoncinis, seasoned croutons), it is fine. I used a ratio of 2:1 oil:vinegar instead of 1:1.

Wilted Spinach and Almond Salad

My husband loved this, my 4 kids weren't thrilled with it, I thought it was declicious, but too salty. The oldest child said the eggs were the key to enjoying the salad, but by that time, the younger three had already eaten their eggs and were just left with the spinach and onion staring back at them. I will make this again, but I will cut the salt in half. Oh, I substituted pine nuts for the almonds because I was out and didn't realize it until after I had already been to the grocery store. I would make it with either nut going forward.

Brown Sugar Meatloaf

I think this is going to become our meatloaf standard. Gone are the days of meatloaf with oats. Saltines are awesome! Made a free form meatloaf in a 9x13 pyrex dish then covered with the ketchup followed by the brown sugar. Loved it! Not a bit leftover for this family of 6!

RITZ White Pizza Meatball Dip, created by Lombardi's Pizza

Fantastic! I must admit that I substituted turkey pepperoni for the meatballs. And only used green olives (chopped very fine) because I didn't have both on hand. My family HATES olives, but they loved this dip and they thought the green olives were pickled jalapenos. They were irritated when I told them, but not enough to stop eating this dip!

Yep, it's the best! Glad to have finally made and rated allrecipes most-reviewed recipe. The only change we made was to cut the salt in half in both the steps involving salt. It was not missed.

Orange Glazed Carrots

I'm giving this 5, because I didn't follow the instructions and don't want to negatively skew the score. I added the OJ, butter, brown sugar, and salt after draining the carrots and simmered it all together for 5 minutes. I thought these were good, but not my favorite way to have carrots (which is roasted in the oven with olive oil, salt, and pepper), but I was looking for something different to try. If I make it again, I'll follow the instructions exactly and rerate it.

Homemade Shake and Bake Mixture

So much better, healthier, and cheaper than the store bought version! We made a half version and omitted the salt (per others' suggestions). We also omitted the minced onion and minced garlic (we were VERY short on time). It was still fantastic even without these ingredients! We plan to make a full version with everything but the oil, salt, minced garlic, and minced onion, to keep on hand. Then we'll just pull out a 1/2 cup at a time and add 2 t. oil when we're ready to use it (and if we have time, a little minced onion and garlic). Thanks for the great homemade version, sal!

Roasted Garlic Bread

I used Dana's method to roast the garlic and it worked perfectly. I deleted the other two recipes in my recipe box for roasted garlic, because this one was spot on.
