Chinese Restaurant Style Hot Mustard

This works great! You don't need the pepper or storage containers. Just make only enough for your meal. It should refrigerate for a half hour or so. Rule of thumb is equal parts water & Mustard Powder (I use Coleman's). A Tblsp each of water & mustard makes just enough for a Kung Pao Chicken, beef or shrimp Dinner. Mike

World's Best Bloody Mary Mix

This is a good recipe. I have (2) suggestions: 1) Substitute Worcestershire Sauce for the BBQ Sauce. 2) Add (1) heaping tablespoon of fresh ground Horseradish. Mike

All-American Burger Dog

This is a take-off on a featured burger at a restaurant known as Fiddler's Three in Lakewood, Ca. It was a small chain of coffee shops in So. Cal. in the late 1960's. It was known as a "Fiddler Burger". It was a 1/3 lb char broiled burger on a toasted, elongated onion roll, with lettuce, tomatoes & 1000 island dressing. Cheese & onions optional. It came with fries & a small salad for around $1.85, w/cheese $1.95. As a cook there, I must have shaped & made hundreds of these. I miss that place. Mike

Beer Lime Grilled Chicken

Omelet in a Bag

I'm confused. I used to cook 50-60 omelets every morning, in restaurants & many while camping, with ready ingredients, a bowl, a fork & an omelet pan, no sweat. Unless you can make these ahead & freeze them for later serving, why the extra effort? Mike

Chef John's Chicken and Mushrooms

There was an attempt to infuse some flavor from the skin into the chicken breast. Which is good, 'cause skinless chicken breast is like eating cardboard. Adding mushrooms is OK for a slight earthy flavor that doesn't really change the taste, but should be enhanced by the flavor from the skin.

London Broil II

Just wanted to pass along a thought. Try using this recipe using a fairly new meat cut known as "Flat Iron Steak". It's just as flavorful as flank steak, but not quite as tough & about the same price. Give it a try. Mike

Creamed Chipped Beef On Toast

This was one of my favorite breakfast dishes when we were out at sea & the alternative was re-constituted powdered eggs. I still fix it or order it wherever I can find it. It's easy to fix, filling & tasty. You can also buy chipped beef in the deli section of your supermarket in a package that's better than the stuff in the can or jar, & it's just right for a couple of people. Also, try it over split buttermilk biscuits. Very good! Mike
