Oma's Rhubarb Cake

Good base recipe but I think it needs some modifications. I made the recipe as written except that I reduced the sugar in the batter to 1 cup and in the topping to 3/4 cup and I still found it too sweet. The cake came out super moist, which was awesome and it think it would be great with other fruit too. However I like at least a little bit of tart in my rhubarb desserts and this was just downright sweet. Maybe it just depends on the rhubarb you use. I will play with this recipe some more to perfect it to my taste buds.

Cheese Cake Cups

Great recipe. I did as other reviewers suggested and used a graham cracker crust and added sour cream to the cream cheese batter. Topped with cherry pie filling and it was delicious. Makes for nice small portions. The hard part is eating only one!

Kale, Quinoa, and Avocado Salad with Lemon Dijon Vinaigrette

Great recipe for a hearty salad. My family loves quinoa so it's great to find new ways to use it. I did make some modifications solely because of the ingredients I had. For the veggies I used lacinato kale, grated carrots, green onion and halved grape tomatoes and used the entire avocado. I added a touch of honey to the dressing. I also cooked the quinoa in broth instead of water. Tasted delicious. I have leftovers I'll eat for my lunch today. This is a keeper.

Spinach-And-Berries Salad With Non-Fat Curry Dressing

Excellent recipe. This is very similar to a salad I made from a Weight Watchers cookbook. That recipe had all the same salad ingredients but also added some toasted ramen noodles on top. Just break up ramen noodles from one package in a dry skillet and toast on medium heat with the pecans for several minutes. This adds a nice crunch to the salad. The dressing was also similar with the curry and balsamic except it used a blend of sesame and olive oil (no longer nonfat though). Personally I like the dressing in this recipe with the Dijon and honey but the sesame oil adds a nice touch too. This one is a keeper!

Barbie's Tuna Salad

Wow. This was much better than I expected. It's nice to have a change from the usual tuna salad recipe. The dried herbs worked just fine but I bet fresh parsley and dill would be fantastic. I will definitely be making this one again.
