Raspberry and Almond Shortbread Thumbprints

These were okay. If I made them again, I'd make them smaller (my fault they were too big) and go really easy on the glaze. But I won't likely make them again - there are lots of cookies I'd rather eat.

Fish Tacos

These were awesome - reminded me of fish tacos in Mexico. We used fresh caught Northern Pike (Jackfish). Left out the capers and Oregano b/c we were at the lake - limited resources. Also used a bag of Coleslaw mix for convenience instead of cabbage. I added my own Pico De Gallo. Even the kids (4-6) couldn't stop eating these. Next time, we need to catch more fish! Thanks for the recipe!

Party Cake Frosting

Bacon Roasted Chicken

This was quite good. I missed the brown skin on top of the chicken - didn't look great but still tasted fine. I think I might try adding onions and/or garlic next time.

Molasses Bran Muffins

Blah - didn't care for these at all. They smelled fantastic while cooking and I was very excited to try one but, unfortunately they didn't taste nearly as good as they smelled. Sorry - just not my thing, I guess. (though I usually do like bran muffins...)

Kettle Corn

Good, simple and quick. I was a bit scared when the sugar hit the oil and sort of clumped up, but I just threw the kernals in, put the lid on and crossed my fingers! I didn't really count the time, just made sure I moved the pot around pretty constantly which worked okay, though I did have a few "well done" kernels. I might be a bit more careful with the heat next time, but I'm sure practice will make perfect, and I will get lots of it because I will make this again for sure. Thanks!!

Miracle Baking Powder Pie Crust

Meh...this crust was okay. I used 1/2 c lard and 1/2 c butter instead of shortening. The flavor was pretty good, but mine wasn't all that flaky. Not sure if my changes were the problem, but I won't try again anyway. Think I'll stick with my trusty old recipe for now. Not bad, though.

Grilled Asparagus

Don't be afraid to grill to the point of almost-burnt. I love asparagus prepared this way, with little bits that are charred. I use lots of salt and pepper - it's like candy to me!

Rich and Creamy Tomato Basil Soup

I was trying to recreate a soup I'd tried at a nice restaurant and thought this would work. It was actually closer to what I was looking for before I added the cream and butter - very tangy and flavourful. When I added the cream, I kind of felt like it became very Campbell's tomato soup-ish...Sorry - I did love it without the cream and will probably try it again that way. Very easy to make - LOVE the basil.

Chocolate Puffed Wheat Squares

Wouldn't use this recipe again. I love puffed wheat squares and these are just as easy as any other but lacking in gooey-ness and sweetness. They need way more chocolate sauce and the sauce itself needs way more brown sugar.

The Best Unbaked Cherry Cheesecake Ever

This tasted pretty good, but it just isn't cheesecake. It reminds me of a dessert my mom makes, called "peaches and cream", where she puts a layer of peaches (or variation) between the crust and filling. I like mom's better - I think this recipe is just a bit too sweet and might be better with fresh fruit. Really easy and worth a try, though. If you love sweet desserts, this is a good one.

Grilled Pork Chops with Fresh Nectarine Salsa

This was really good. I didn't have the exact ingredients, so I improvised a bit and it still tasted great. Easy to make and a nice variation on regular old pork chops - will make again!
