Mini Frittatas with Quinoa

This recipe is great! Made this with a tiny substitution. I used some bacon and pepperoni instead of ham. Just didn't have ham on hand. This was awesome! Great taste. Easty to make, and I reheated the leftovers the next night, and they were great! Try them and don't be afraid of substituting different meats and veggies.

Hot Artichoke and Spinach Dip II

The taste was good but I too thought the consistency was a little off. I was hoping for a creamier dip. I did everything called for except for the quarter of a cup of mayo I made it half and half (sour cream & Mayo) but that was the only difference so that would not have changed the consistency. I have had a creamier artichoke & spinach dip before and my husband and I like it creamier.

Pumpkin Pancakes

GREAT recipe. Did everything in the recipe but omitted the vinegar. Awesome flavor. Be sure to cook these pancakes in smaller portions and use your spoon to pour out batter and then spread out the batter a little more as they are dense and do not cook like normal pancakes. I also took maple syrup and whisked in some ground cinnamon and heated. Poured that over and they were delish!!!

Balsamic Bruschetta

This is the best and most simple bruschetta recipe. It is great! I usually make it early in the morning so it has time for the flavors to blend. It is great the next day too if it lasts that long.

Chipotle Crusted Pork Tenderloin

I love this and have made it multiple times how. I have made it both with and without the Chilie Powder. So, if you need to omit the spicy/hot taste it is great without!!! It is so moist and tender. This is a winner!

Mom's Coleslaw

This was a great recipe. Some people like a lot of dressing on their slaw and this recipe will make it very wet so you can hold back a little on the wet ingredients. It will be rather sweet with these mesurements so you can hold back a bit on the sugar too. I will add a little red or green onions next time along with some celery or celery seed. But the taste is great and a memory of Grandma's slaw!!!!!

Charleston Breakfast Casserole

Try this, it's great! I used cheddar cheese flavored croutons which gave it a richer flavor. Otherwise made the recipe as it reads. I would bake it less than 50 minutes next time. Check it about 42-44 minutes and I think that would be sufficient! It's Great!!!!

Salsa Cube Steaks

This was great! I do have a couple of suggestions. I put S/P & Cumin on the steaks and seared the meat for about 1-1/2 minutes on both sides over a high heat in a pan with a little oil. I put them in my crock pot and spread some sliced onions, zucchini, red pepper and green peppers over the meat. Here is the clincher - I put a 16 oz jar of Peach Pineapple Salsa all over that. NO Water -you get enough liquid from the salsa. I cooked them on High for 2-1/2 hours. Oh my heavens does it taste good. It really tasted that good. Be bold and try a different type of salsa, if you like eating it on chips, you should like it in this recipe. I made rice to go with it - awesome.

Round Steak and Gravy II

I made a 1-3/4# thin round steak in my crock pot.I salt-peppered the steak and lightly dusted both side with Garlic Powder. I threw the steak in a pan with a little oil on the bottom and cooked it on both sides for about1-2 minutes on high heat just to quick brown it. Then I put it in the crock pot and added the 1 can of cream of mushroom and 1 can of French Onion soup but did NOT add the can of water. I cut up a few slices of onion and spread them over the top. Cooked on high for 2 hours and 2 hours on low. Then I put the gravey in a pan over medium high heat and sprinkled in a couple of tablespoons of flour to thicken. Awesome taste and meat fork tender.There is no way your meat can be dry or tough. This is fool proof. I made mashed potatos and put gravey over it too! If your meat is thicker and the top of it is exposed you might consider adding the water to it, but if it is thinner leave the water out. A much richer taste. Either way you will probably want to thicken it up by whisking some flour into the gravey. Enjoy!

Easy Rum Cake

Excellent taste! Super easy! An absolute must! I made it for a Superbowl party and they just loved it! I am going to try the other variations that other Members have suggested. But go ahead and try this, you won't be disappointed - just remember it's a Rum Cake - it will take like Rum!!!!! Yummmmm!
