Garlic Cheddar Chicken

This was both delicious and very simple to make. I halved the recipe but forgot to halve the butter/garlic mixture so I placed under the broiler for a few minutes... this eliminated the sogginess and made the cheese nice and crispy - just the way I like it!

Coconut Cream Pound Cake

I loved the taste of this cake. Mine did come out a little dry - or maybe dense is a better descriptor. I read and re-read the indredients to see if I had done something wrong and don't think I overcooked it. Regardless, it was delicious and a must for the coconut lover... After his third piece, one guest said it was heavy, like eating a brick, but that if all bricks tasted like this he would eat a building... I topped with Cool Whip and strawberries as some suggested and can't wait to make it again.

Baked Mushrooms

My husband and I both enjoyed this - and he is not a veggie eater. I added more garlic and red pepper than the recipe called for and omitted the water. I also uncovered the dish for the last 15 minutes, which dried up some of the liquid. Then, I placed the leftovers in the same container as some left over pasta (juice and all) and that was fabulous the next day. Next time I think I will try this recipe with a little lemon pepper.

Aussie Chicken

I am so full.... we ate it all! I also cooked the chicken in a small reserve of the bacon grease for 5 minutes on each side. I did this ahead of time and found that I needed to cook the chicken for about 30 minutes in the oven - maybe because it had cooled off. I loved the honey mustard sauce... I will make this again!

Chocolate Cherry Cake II

Well, I thought this cake was great and so did everyone at my husband's office, although next time I will try it with a little more cherry filling - or raspberry! In the interest of time, since I was baking for a party, I used a canned frosting (chocolate almond). Actually, the flavor complimented the cherries and the almond extract nicely. I will definitely make this again.

Quick Lemon Poppy Seed Bread

This was very moist and easy to put together. I made it for a staff meeting at my husband's office and it went quickly. I did taste the batter and decided to add 1 tsp. of lemon extract to add to the flavor. Next time, I will make this in a bundt pan and add a lemon glaze. Then, I think it will be excellent. : )

Amaretto Cake

This cake was moist and delicious. I received many compliments and many requests for the recipe. I am not a fan of cakes that use a mix but this one is a keeper! Although I can still tell it is made from a mix, the amaretto gives it a really special flavor. I made one and a half times the glaze and was too impatient to wait more than 15 minutes to remove it from the pan. At that time, I noticed that the glaze was not evenly distributed so I halved the glaze recipe and brushed the rest over the top. Before serving, I dusted this cake with powdered sugar to lighten it up a bit (in coloring... not in calories). It was very good!

Apple Raisin French Toast Strata

All of my guests seemed to love this recipe. It did take much longer than said time to cook in my oven (and I even raised the temp to 350). I melted the cream cheese and added extra raisins (1/3 cup Sunmaid Baking Raisins) as some suggested. The longer it sat, the more delicious it was. Thanks for the recipe. I will make this again and experiment a little more : )

Banana Cake VI

This is the most delicious banana cake. It is very moist and tastes especially good (but not overly sweet) if made with extrememly ripe bananas that are mashed really well. You can use less ripe bananas to decrease the sweetness if desired. I have made this recipe repeatedly and neither my guests nor I have ever been disappointed!
