Asparagus Avocado Medley

Carrot Cake III

This is one of the best carrot cakes I have ever had. It was moist and chewy, not dry like most of the ones I have eaten in the past. The frosting is really sweet, but it's a great compliment to the cake (which I didn't think was too sweet at all). I will make this again for sure!

Fresh Southern Peach Cobbler

This was pretty good! It was just a tad too sweet, so next time I think I will reduce the sugar in the peach mixture. I will be making this again!

Amazing Pecan Coffee Cake

This was really good. I made it for my hubby for Father's Day...and he loved it! I didn't have any sour cream, so I used low fat plain yogurt instead and it still turned out perfect. My kids loved it too, and the whole pan was gone before I knew it! This is a really easy recipe, and I will be making this again soon. Thanks for a great recipe!

Asparagus, Feta and Couscous Salad

This is a nice side dish that I would definitely serve to guests. It only took a few minuets to prepare, and the flavors are great! I did add a bit of chopped red onion and some dried basil, oregano, and parsley, and I cooked the couscous with chicken broth. I actually liked it better the next day, so I will prepare it in advance next time! Great recipe!

Harvest Rice Dish

This is such a good recipe. I made it for guests, and they just raved over it..they liked it so much that I ended up sending the recipe home with them! I made a batch of this for Thanksgiving too, and it was a huge hit. I didn't put any orange zest in it the second time I made it (I didn't have any) and it was still fantastic! It's such a pretty presentation too!

Harvest Rice Dish

This is such a good rice dish! I made it for company and they just raved over it, and my hubby liked it so much he asked if I would make it for Thanksgiving. We just finished dinner, and I have to say, it got tons and tons of compliments! It's a keeper and a new favorite in our house! thanks for the great recipe Kathy!

Bulgur Stuffing

This is so good! I was in the mood for stuffing but it's a no no on the south beach diet (which I have been on since july). It has the same flavors, but the texture is just a bit different. I now know what to do with that box of bulgar that I bought! This is a keeper!

Sugared Black Raspberry Tea Cookies

These were really good. I used regular raspberry jam (couldn't find black) and I chopped up regular chocolate chips to make them smaller. I made them for a mother's day tea, and everybody really enjoyed them. I had extra left over, so I gave them to my friend and she loved them too! She told me "I ate one and all of a sudden I really wanted a cup of tea!" I guess they really are tea cookies! I will make these again!

Best Ever Split Pea

This was my first time making or eating split pea soup-(split peas were on sale at the store so I thought I would give it a try!) Though it was a bit on the thick side, it has a wonderful flavor. I added just a bit more water to give it more of a "soupy" texture. I didn't even bother putting it through the blender, and I added some chopped up leftover ham. A cheap, filling meal- I will be making it again!

Sloppy Joes II

I was skeptical at first....there is so much ketchup in it I couldn't imagine that it was going to taste good. Well, I was wrong- it was great!! I used ground turkey and whole wheat buns. My husband really liked it and so did my 8 year old. This is going to have a permanent home in my recipe box!

Basic Crepes

Wow!! I made these for breakfast on Christmas morning and they were just perfect!! I filled them with blueberry pie filling and sprinkled them with powdered suger. Everyone loved them, and they looked as good as they tasted!! They are really easy to make too. I found that they were easier to flip when I sprayed the spatula with Pam. I am going to be making these often!!!

I don't know....I just wasn't thrilled with these. They were okay, but not great. I think there is too much ground clove (maybe cut it down to 1/2 a teaspoon). I don't think I'll be making these again...sorry!!

Red and Green Christmas Jalapeno Jelly

I would give this 10 stars if I could!! This is hands down the best pepper jelly I have had. I made this for holiday gifts for my neighbors, and it makes for a really pretty gift presentation if you tie red and green ribbon around the jar lid. Love it!!

Mrs. Sigg's Snickerdoodles

Wow!! This was my first try at snickerdoodles, and I was really happy with the way they turned out!! They are nice and light, sweet but not too sweet,and with just the right amount of crunch!! They look so pretty when they come out of the oven too!! These are a great cookie to make with the kids...my 5 year old daughter had a blast rolling the cookies in the sugar/cinnamon mix.

Irish Chicken and Dumplings

This was good....just a bit on the bland side. I added some fresh garlic, salt and pepper to give it a little more "umph"!! I thought it made way more than 6 serivngs, the first time I made it we had leftovers forever!!! I made it for guests and they really enjoyed it. It's a very good "rainy day" meal. I'll make it again for sure!!

Barbecue Tofu Sandwiches

When it comes to tofu, I usually stir fry it with veggies, or bread it and serve it with a tomato sauce and spaghetti. This was a nice change of pace...I never thought to put tofu in a hamburger bun!! I used whole wheat hamburger buns and served it with a green salad, making for a super healthy dinner!! I also used honey BBQ sauce, which was super yummy with the combo of the onions. I will be making this again!!

Chicken Enchiladas II

I have been using almost this exact same recipe for years, and it is just a wonderful, no fail recipe. Try spreading some of the sauce on the bottom of the pan so that the bottoms of the tortillas dont get hard. Yummy!!

Sausage and Rice Stuffed Peppers

These were good!! I have to say I agree with some of the others that the meat/rice mixture does not need to be cooked as long as the recipes says. I just boiled the peppers, stuffed them, and put them under the broiler for a few min. to get the cheese all crusty and bubbly. I'll make these again!!

Connie's Zucchini "Crab" Cakes

Yum. These are sooo good!! I actually omitted the butter because they were moist enough without it. I also added a clove of garlic just for fun. Put them in the fridge for about 30 min. to firm them up before cooking, and they hold their shape really well!! Do yourself a favor and follow some of the others' advice-drain the zucchini really well or they will be soggy!! Awsome!!!!
