I made this dish last night on a whim and I'm so glad I did! It was absolutely delicious! My boyfriend was so impressed and asked me to make this again sometime! He's the fussiest eater, and he hasn't said that about anything else I've experimented with. The flavors were wonderful, the chicken was so juicy and tender! I made a couple changes to the recipe based on other reviews. Instead of using water I used red cooking wine, and also substituted the vinegar for white cooking wine. I used only 1 tsp of chili powder, instead of 2. I'm glad I did otherwise I think it would have overpowered the other flavors. I also used a can of organic diced tomatoes instead of stewed. I didn't have any celery seed on hand, so I substituted with celery salt. I added red onion cut in rounds once the sauce came to a boil, replaced the chicken, and added the rest of the onion on top and around the chicken. It smelled fantastic while it was cooking! I made a cheesy hash brown casserole as a side, however the flavors were too rich together. In the future I'll probably opt for a green bean or asparagus side dish, and maybe saffron rice. I will definitely be making this dish throughout the years to come!!
