Aunt Mary's Eggplant Balls

We loved this recipe! After cooking the eggplant, I put it into the food processor to break it down a little more. Also added enough breadcrumbs to make it easy to handle. After making the balls, I froze them. Then, when I wanted them I baked them for 30 minutes. They were awesome and one of our new favorites! Thanks!
