I love this recipe. It's so easy. I'm not that great in the kitchen and I have never been able to make rice, so I cheat and use Minute Rice. I just don't cook it as long. I also don't brown the rice, but I do stir it around in the skillet before I add the stock and salsa. During the summer I add some extra bell peppers from my garden. I also substitute vegetable stock for the the chicken stock since I follow a vegan diet.
