Banana Cream Pie I

This was so good and a huge hit with my family. Due to lactose intolerance in my house, I used unsweetened original almond milk. Other than that, I followed the recipe's ingredients with the flour, yolks, vanilla, etc. I skipped the baking as advised by other reviewers. It was not runny at all! Will def. be making this again!

Shredded Chicken Tacos

Such a great recipe. I just throw everything in the crock pot with 5 boneless skinless chicken thighs (frozen) and cook on low for 6 hours. This is our go to shredded chicken taco recipe.

Uptown Cowboy Caviar

Downeast Maine Pumpkin Bread

Excellent recipe!! I reduced the sugar by half a cup, but kept the rest the same. It was delicious, the sweetness was just right. I made three loaves and froze 2 for later although I shouldn't have bothered because the one loaf is going very fast in this house.

Rempel Family Meatloaf

Great recipe! The meatloaf turned out super moist, at first I thought there may be too much liquid, but it mixed up fine. I used dried onion flakes instead of onion soup mix as suggested. Also, topped the meatloaf with steak sauce and ketchup before putting it in the oven for an hour. Will definitely make again.

Best Tuna Melt (New Jersey Diner Style)

Great tuna melts!! We will definitely be making this again. The only changes I made was I added a whole small onion chopped (that was an accident but it tasted great if you like onion), dried parsley, and white american cheese instead of swiss.

Sean's Falafel and Cucumber Sauce

Great recipe! I made this tonight for visiting family since meat was not an option. Everyone loved it, I tweaked it a little bit by doubling the garlic. Used fresh cilantro and dried parsley. Also, I forgot the baking powder. I made them into balls and deep fried them in my fryer. They did not fall apart, they looked perfect. They were crisp on the outside and moist and soft on the inside. Served them with a dill yogurt sauce and hummus in whole wheat pitas. There were no leftovers.

My Crab Cakes

Yummy these are the best. I use one sleeve of Townhouse crackers. Also, I don't use 1/2 a cup of oil. I just put enough oil to cover the bottom of the pan. Otherwise, I followed the recipe as written. I added salt, but it wasn't really needed.

Pumpkin Crunch Cake

Great recipe! I made it pretty much as written except I used walnuts instead of pecans and I made my own pumpkin spice mix instead of buying a jar from the grocery store. I served for friends and family and it was a huge hit. I even overcooked it so the top was slightly burned. So I had to scrape that off, but still, no complaints here! Next time I'll cook it for 1:10 instead of 1:20.

Chicken Pot Pie I

Great recipe! I used refrigerated crusts which required me to bake it longer than specified (maybe 15-20 min. longer). I also baked the bottom crust first for 10 min. as others suggested. Also, I used one can cream of celery reduced fat soup instead of cream of chicken and I also added the suggested amount of fat free milk. I used one box of frozen mixed veggies as well as a fresh chopped onion, garlic powder, dried thyme, basil, oregano, a touch of mrs. dash seasoning mix and a hint of cayenne pepper. Lastly, instead of chicken, I used leftover turkey sitting in my freezer from Christmas. Super easy and with the low fat soup and skim milk modifications it was on the healthier side. The only change I would make is add a little salt since the soup was blander than the full fat variety.

Peanut Butter Popcorn

Yum! I loved this recipe. I may add more peanutbutter next time. I used a mini microwave popcorn bag and changed the serving size to 1 instead of 6. It was the perfect amount for one person who was willing to share a little. :)

Tortilla Soup III

Great recipe! I really enjoyed it although I must admit I didn't follow it exactly. First, I used one can of low sodium/low fat chicken broth plus three cubes (plus water) of boullion. Second, I used fresh tomatoes I had quartered and frozen plus one small can tomato sauce. I only had one can corn and I used ground turkey. The spices I kept the same which is the important part. Lastly, I had no cornstarch so thickening the soup was not done and I used corn tortilla chips since that's all that I had. Thanks for sharing!

Pasta with Tomato Cream Sauce

I really enjoyed this cream sauce recipe although I made some changes. I used crushed tomatoes instead of jarred pasta sauce. To flavor it I threw in a chopped onion, garlic, oregano, fresh basil, salt, pepper and nutmeg. I poured it over cavatelli pasta mixed with broccoli, peas, mushrooms, and ground turkey and baked it until it bubbled. yum!

Red Enchilada Sauce

Great enchilada sauce recipe. I have not been able to find ready made enchilada sauce anywhere in my neighborhood, so I decided to try to make some instead. This was such a great recipe and tasted even better than the store bought stuff. The only change I made was I put half broth and half water in the sauce since I had half an open can sitting the fridge. Also, since the tomato sauce and the broth have salt in it, I didn't add any extra.

Oatmeal Chocolate Chip Muffins

Great recipe! The muffins were light and tasty. Just the right touch of sweetness. I subbed OJ for the milk as another user suggested since my husband can't have dairy. It gave the muffins a really nice and subtle orange flavor. I was worried about the 4tspns of baking powder, but they turned out fine with all of it. i also only added 1/4 cup of oil instead of 1/2 cup and i only put the first 1/2 cup of brown sugar. edit: after a day or two, i think i could taste the baking powder. next time i think i'll reduce the amount.

Chicken Delicious

I usually do not enjoy chicken breasts made in the slow cooker. For some reason, they always seem to have a funny flavor. However, I decided to give this one a shot and it was a big hit with my husband and I. I used only cream of mushroom soup since I halved the recipe. Will definitely repeat!

Spinach Quiche

Great recipe!! I really enjoyed this. I used reduced fat feta. I just eyeballed how much cheese I wanted in it and I'm pretty sure I didn't come close to putting in as much as what the recipe called for. Also, I mixed all the cheese in instead of sprinkling it on top. I also used fresh mushrooms which I sauteed with the onions. Finally, I put 3/4 of a packet of spinach. Great recipe! Thanks for sharing.
