Cindy's Snappy Sensational Superfood Soup
What a GREAT soup! Made it yesterday and we had for dinner tonight. Even my picky 7 yr old cleaned his bowl. After reading other reviews I too modified it to our tastes. Sautéed onions with 5 crushed garlic cloves, then added sliced organic cremini mushrooms. Used 2 Veg broth cubes in about 8 cups of H20, substituted frozen organic Kale for the spinach and doubled the spices (except cayenne as I didn't have any)and put in fresh ginger vs powder. Didn't have turnip either so chopped up some fresh roma tomatoes. Cooked on high in crock pot as directed yesterday, then set to low for 4 hours today. YUM! This soup is very easy, versatile and delicious. Thanks for sharing Cindy!

African Peanut Soup
My 7yo didn't care for it but we loved it. It is so tasty! I followed other reviewers and tweeked a few things as well such as peeled chopped potato, 1/2 cup salsa and I had an African blend spice which has cinnamon and fennel in it..yum. I used brown basmati rice, fresh roma tomatoes, sliced carrots and put a full cup of Kraft creamy peanut butter. You really can't go wrong. Definitely be making this again and again. Thanks for sharing!

Twice Baked Potato Poppers
Definitely making again and giving 5 stars based on my changes to make it more of a vegan meal. I used what i had on hand and tweeked as follows - baked 2 large russet potatoes and while it baked, i simmered a small pot of kidney beans and black beans mixed with salsa. Scooped out potato and mashed in the bean/salsa mixture. Cut up some bits of old cheddar for the top and popped in oven. Sauteed mini bella mushrooms in chicken broth and garlic and served on top of baked potato. Dollop of sour cream and WOW.. AMAZING!!!!
