Ma Lipo's Apricot-Glazed Turkey with Roasted Onion and Shallot Gravy

I've made this turkey for Thanksgiving for the last 5 years. Its the most flavorful turkey I have ever had. The gravy it makes is fantastic. There is just something that commpliments the apricot and the herb butter just perfectly. Soak your bird in salt water for a few hours and do the butter rub the night before. Try to use fresh everything, sage, ginger, thyme, etc. It really is a fantastic recipe for entertaining. It gives your dinner a touch of "gourmet".

Focaccia Bread

This was wonderful focaccia bread. It was very easy to make. I made a few changes to our families liking. I used rosemary in place of the basil because I was out and used less salt in the dough because I like to sprinkle corse salt over top. Use an exceptional olive oil for great flavor, and, as one other reviewer mentioned garlic granules are not authentic italian and use milk instead of water. I made one batch with fresh minced garlic and one without and they both were good! I suppose the granules would be okay, but the bread seemed more "fine dining" without them. This bread is very quality and impressive for dinner parties or a gourmet meal. Make sure you know how to work with yeast so you get nice fluffy, chewy, risen bread. Definatly will me making a lot. Thanks for the great recipe.

Quick and Easy Alfredo Sauce

This recipe is wonderful. If you are having problems with the curdling of the cream cheese, try softening it in the microwave. It will help when whisking. I added fresh shimp to my sauce over linguini. Definatly a keeper.

Clone of a Cinnabon

I make these all the time by hand and with a kitchen aid. I have to say, this is one of the best sweet doughs I have ever used. I just made 150 rolls for a very large family vacation. Every single roll was perfect. This recipe is really hard to mess up. The less you work the dough and the least amount of flour to use as possible will give you the lightest and chewy bun. Letting them rise overnight is so simple and easy. I bake professionally so I try different icings when I have time. I suggest trying something different then the one listed in the recipe. There are better ones out there.

Cranberry Orange Relish with Orange Flavored Liqueur

Very good sauce. Made one without the liqueur and was just as tasty. It is quite tart, depending of the season you make it. I used a very sweet orange which I believe helped cut the tartness. Definatly a keeper.

Apple Dumplings II

Great tasting dessert despite the fact that my presentation was pretty poor. You want to make sure you can do this recipe from start to finish interruption free. Between the phone ringing, neighbors dropping in, and children running around I threw the apples together in a hurry and didn't pinch the dough enough around the top. Another thing, make sure you use an apple corer for this. I though I could just cut the apple in half and scoop out the core. NO GOOD! 2 of my apples drifted apart in the pan and fell over making a soggy crust as the result. Also, I only made a 1/2 recipe and though I would just use a 9X9 pan. Too much juice accumulated at the bottom making the crust a bit soggy. Overall, the taste is great. Kinda like your own personal apple pie. Of course serve with vanilla ice cream. I will try this again because it did taste very good even though it looked pretty bad!

Garlic-Lemon Double Stuffed Chicken

What an awesome dish that was so simple to prepare. The only modification I would make to this one is instead of sandwiching the cheeses between the chicken I would rather pound the chicken flat, fill, then roll the chicken so there is less oozing. Most of my cheddar cheese fell out causing it burn on the sides of the pan. Other than that minor mistake, this dish was excellent. My husband who is one of the pickiest eaters even loved it. Thanks.

Sweet Dijon Salad Dressing

Just whipped this up as I was serving dinner. I wanted something different then the usual oil and vineagar. It was very good. I used a nice mix of baby greens as well as walnuts and golden yellow and regular raisins. Awesome.

Most Excellent Breakfast Casserole

I made this for Easter brunch for 20 big Navy guys, they absolutly loved it. I made two huge pans and they both came out perfect. I was very happy that the middle did not come out soggy. One of the pans I ended up baking a bit longer and it was still excellent. I did make some modifications that went well. I put almost a pound of mild cheddar cheese in each casserole. Six slices was not nearly enough for my Wisconsin raised husband. I didn't exactly trim the bread well and it didn't make a difference. All I used was one small onion for one of the casseroles. 3 seemed way to overpowering. The other casserole I left without onion. What I would suggest for others is spray the bottom of the pan with cooking spray just "incase". Also, you can use less egg/milk and still end up with a good casserole.

Make Ahead French Toast

I just made this for an Easter Brunch for all the navy guys in my husbands command. It was a huge hit! I doubled the recipe and made 3 huge pans of french toast. I got way more then the suggested serving size. This recipe is great if you don't like soggy french toast. It came out very crisp and well cooked on the inside. The topping is so good you don't even need syrup. Will definatly use again.
