Downeast Maine Pumpkin Bread

I LOVED this recipe! Me and my mom made it on her birthday. We did a couple changes though because of diet restrictions and not having the ingredients. We used gluten-free flour, added a couple handfuls of pecans, used almond oil and used 1/2 sugar and 1/2 stevia (my mom is a health nut). We gave some to my teachers and friends and they all loved it too! One teacher said "this is the best pumpkin bread I have ever tasted!". None of them knew it was gluten-free...
