Healthier Chicken Enchiladas I
I made this pretty much following the recipe to a tee and it was delicious. I did end up using more than 8 tortillas and using 2 casserole dishes but that just meant that we had some leftovers which was fine with me. When I make this again, I think I'll sprinkle some fresh avocado on top to make it a little more healthy after it comes out of the oven.

Bacon Wrapped Barbeque Shrimp
How can you not like shrimp no matter how they're cooked? I decided to grill them on the gas grill so I precooked the bacon for about 2.5 minutes in the microwave (1/2 strip of bacon, I used 16-20ct large shrimp) and wrapped them in bacon. I seasoned them with Old Bay seasoning (not usually a big fan of Old Bay but they turned out great) and then skewered about 5 per stick and seasoned them well with Old Bay. Then dabbed them with bbq sauce and grilled them for about 10-13 minutes on the gas grill. I dabbed them again after flipping the skewers and again when they came off. I served them over rice pilaf and it was very tasty. I think next time I'll pre-cook the bacon even more as we like our bacon crispy.
