Chicken Breasts with Chipotle Green Onion Gravy

This was such a hit with my husband that after I made it he asked me to make more. The first time I made it I used vegetable broth because that's what I had on hand. I use a southwest chipotle mix of spices. This is super easy to make and absolutely delicious.

Roasted Brussels Sprouts

These were amazing. This was my first time roasting brussel sprouts and it won't be my last. After reading reviews I decided to cook it according to the time on the recipe and I'm glad that I did. I also added fresh chopped garlic along with the olive oil and salt & pepper.

Chicken Cordon Bleu II

Delicious. I made this for two people, but I made the sauce as though I was cooking for four based on other reviews on how wonderful it was. I'm glad I did. I also did wrap my ham around my cheese so it wouldn't ooze out and it really helped. I used smoked paprika instead of regular, and it gave it a great taste.

Sausage Gravy III

Excellent and easy to make. I did "resize" it for 2 people but still made a few modifications. I used 3 TBSP flour instead of 2 to make the gravy thicker and I only used 1 1/2 cups of milk because 2 would have made it too watery. These modifications might have been necessary because I used skim milk. I also used turkey sausage because that's what I had on hand, it was as good as pork sausage.

Lemon Chicken with Broccoli

Easy to make, Tastes great. I sprinkled some garlic & herb seasoning on the chicken when I browned it. I did not find this dish salty at all like others did. I also used asparagus instead of broccoli and I put the asparagus in with the chicken and ended up cooking the dish covered on low for 40 minutes. The chicken was very tender.

Tortellini Bacon Broccoli Salad

With a few modifications this recipe was a hit at Mother's Day. I'm not a fan of store bought coleslaw dressing, so I used a creamy italian. Which I thought was more fitting for the tortellini. I found the recipe recommendatin of (2) 9 oz. pkgs. of tortellini to be way too low for 10 servings especially with 4 cups of broccoli. I wondered if it was a misprint and should have been (2) 9oz. pkgs? Anyways I used about 30 oz. of pasta, 4 cups broccoli, and about half a bottle of dressing.

Roasted Garlic Lemon Broccoli

Excellent. I made the recipe with only one head of broccoli and kept the rest of the recipe ingredients the same, except I added a touch more oil because it sounded low. Also, I put in the lemon juice with the mixture before I cooked it, I didn't sprinkle it on after. This was very tasty.

Chef John's Tzatziki Sauce

This sauce is excellent. Once you start eating it, you can't get enough of it. And it definitely is better the second day. I followed the recipe exactly and it tastes very authentic.

Garlic and Herb Cream Cheese

Excellent and easy to make. I used all fresh herbs instead of dried herbs. Tripling the amount called for to convert the dried measurement to fresh. I also eliminated the butter because I was making it to stuff portabella caps and thought the butter might make it too light and creamy for my purpose. Very tasty!

Cream Cheesy Cubed Zucchini with Lemon and Oregano

I will admit, I wasn't crazy about making this recipe based on the picture. It looks a little bland to me. So with a few modifications I decided to make it. I had no lemon zest so I just put in a dash of lemon juice. We like spice so I put in more than a "pinch" of crushed pepper and put in lots of black pepper and cayenne. I only used about 1 medium zucchini (not 4 cups). My recipe turned out much more sautéed-like and red (cause of the spices), not white like the picture. I should have taken a photo to add with my review. I would make this again, but with my modifications.
