Blackberry Cobbler II

This cobbler is SO good! I took the advice of others and doubled the dough recipe (using 1/2 whole wheat flour, and it turned out great! Also only used 1/2 C sugar for the doubled dough recipe and added some cinnamon, too.) It is easy and soooo delicious!

Tomatillo Salsa Verde

My kids were literally eating this salsa by the spoonful! It's that good! I used a hefty handful of cilantro, because I didn't want it to go to waste and I subbed a jalepeno for the serrano, because it's what I had on hand. I also didn't add all the cooking liquid to the blender - the results were fabulous. I will definitely add this to our keeper list!

Almond Flour Waffles

My husband followed the recipe exactly, cooked on the lowest setting on our waffle iron, and they came out really dark, bitter, burnt-tasting and with a terrible texture. I will definitely not use this recipe again.

Ultimate Maple Snickerdoodles

Awesome! My husband declared these "the best snickerdoodles ever." I didn't have maple sugar, so just used turbinado. I also used half whole wheat pastry flour and half white flour with great results. Next time I might add a little maple extract just for an added maple "oomph". But these are great as is. :)

Peach Coffee Cake II

This was good, but not great. If it hadn't take so long (it takes a while to slice peaches, and then you've got to wait the 45 minutes of baking) I would have rated it higher. But the effort/time to deliciousness ratio was too low for me to make this one again. It could be sweeter, and definitely needs some more spices - ginger, or nutmeg maybe? I don't know, but it's missing something.

Cajun Cabbage with Rice

Very tasty! We're vegetarian, so I substituted some veggie burger crumbles for the beef. I didn't have tomatoes with green chiles, so I used regular diced tomatoes and added a fresh minced jalepeno. I forgot to cover it for about the first half of baking, but it didn't seem to suffer too much. I will definitely make this again, it was soooo easy and filling. And a great way to use up some cabbage (one of those "what do I do with this?" vegetables for me).

Honey Wheat Sandwich Rolls

OMG YAY! These rolls are fantastic! I've always wanted to make my own (veggie) burger buns and these are the best! I was so psyched about them I was singing in my kitchen all afternoon. Thanks for this awesome, foolproof recipe. Oh and a note: I veganized this recipe. I used soymilk, egg replacer, and soy margerine and they came out *perfect*.

Lentil Soup

Very good. We never have celery around so I just added more onion/carrot and it was still great. Balsamic vinegar makes ALL the difference in the world. This recipe makes a TON - we kind of got sick of leftovers (there are just 2 of us)! Next time I'll plan on freezing half so we don't get lentil burnout.

So delicious and so easy! Whenever I get a lasagna craving, I make this recipe because it takes about a quarter of the time and effort of lasagne but delivers the same eating experience. A definite keeper!

Addictive Sweet Potato Burritos

Very yummy recipe! The only addition I would make is to chop up a chipotle pepper or two (the kind canned in adobo sauce) and add to the sweet potato mixture prior to assembly. Adds a nice kick! We eat mashed sweet potatos like this all the time as a side dish, so it seemed a natural match for burritos. Add some of the adobo sauce too!

Spinach and Sun-Dried Tomato Pasta

Yum! Although I used a lot of pots and pans making this, it was quick and easy, and most importantly, delicious! I've made different versions of this in the past, but the crushed red pepper flakes were a nice new touch.

Creamy Rice Pudding

YUM! YUM! YUM!!! I left the raisins out and substituted soy milk (only kind of milk we keep in the house) and it was great! Might add a bit of maple syrup or honey next time, I needed a teensy bit more sweetness. I will definitely make this again.

Barbeque Halibut Steaks

My husband and I really weren't too impressed by this one. Halibut is such a mild-flavored fish, it really needs an assertive sauce/marinade and this was just too mild/bland for our taste. Maybe if we had added some really spicy chili sauce...

Almost Eggless Egg Salad

This is great stuff! I've made several versions of this in the past, but this was a very good one. I don't like celery, so I just substituted more chopped (red) onion. The dill gave it a unique, refreshing flavor. Fantastic!

Quick Stuffed Tomatoes

This was a fun dish to make. My tomatoes were a little small, so I had leftover couscous, which was fine with me! Delicious! I didn't have sun-dried tomatoes on hand, but I sauteed some chopped mushrooms and also added a handful of chopped walnuts to the mix, with great results.
