A-Number-1 Banana Cake

Made tonight and it was yummy! Subbed the buttermilk for sour cream because that is what I had and did not put nuts in because of allergies. Added mini chocolate chips - so good. :)

Slow-Cooker Chicken Tortilla Soup

This is an awesome soup. Used homemade chicken stock for all liquid instead of water. Used Rotel for tomatoes and chiles. Did not have that much chicken - so there is maybe 1/4 cup there. The major change I did was add a premixed 1/2 cup flour and 1 1/4 cup milk to the mix - so good.

Bran Flax Muffins

Kids and hubby rated it an A+!! We normally eat healthy but these are amazing for a healthy muffin. I think they taste just like the Starbuck's version. Give this a try! I did follow the recipe exactly except soaked the raisins for 15 minutes in warm water to soften them. Did adjust for high altitude.

Best peanut butter cookie recipe I have tried. Used organic peanut butter and added about 1/4 cup more because it finished it off. Will make again!

Apple Scones

This is a great scone recipe. I highly recommend it. I changed the baking powder and added cinnamon and nutmeg into the batter. I did not want to use my milk since I only had enough left until tomorrow so I used half and half. I will make this again!

Crustless Spinach Quiche

Loved this recipe. Very adaptable. I added an extra egg because of my high altitude and a little half and half. I made this in a muffin pan so that we could have individual toppings for me and the kids. I will make again!

Refried Beans Without the Refry

This makes amazing beans - to quote my kids, "This is better than Del Taco!" I looked at my hubby and said, "Is that a compliment?" LOL! Seriously - these were amazing! The only thing I did different was to use 1/2 chicken stock. I will make again!

Best Guacamole

Made this today for a BBQ. With the changes mentioned below - it was a total 5 plus. A bit bland before cilantro, tomato, jalapeno, cumin and garlic. I am not sure if the olive oil helps it stay green and not blacken? It was left out for 2 hours and it was still pretty! I will make again!

Fresh Tomato Salsa

Great recipe. Followed the below reviewer and added garlic and cucumber from my garden. Left out the onion due to tired chopping hand - no other reason. A tad spicy - I used only 2 serranos - but I still had to add extra lemon juice to mellow it out with an extra tomato.

This is a great recipe. I used 1/2 applesauce and 1/2 oil and it was very moist. The other addition I made was to add the juice from the lemons. I will make again.
