Kielbasa with Brussels Sprouts

This was a great basic recipe to build upon. I added beer to the pan with the oil and onion and sauteed it with the kielbasa. I added a little more beer with the brussel sprouts, then I covered the pan to let the ingredients simmer in the liquid. When the sprouts were cooked through, I took them and the kielbasa out and put them in a bowl to hold. I then added more oil to the pan and some roasted garlic smashed with salt. I then deglazed the pan with beer, and kept slowly adding more beer to get to the consistency I wanted. I added some dijon mustard and salt and pepper to taste, then added the kielbasa and sprouts back into the pan and tossed to coat. I served it with parmesan and cracked pepper polenta... delicious!

Best Ever Jalapeno Poppers

I agree with all other reviews, these taste just like the poppers you buy at restaurants! I omitted the bacon bits and used egg mixed with a little water instead of milk to dip them in and they were fantastic! And I definitely recommend doing the triple battering!

Corned Beef and Cabbage I

This recipe was so easy and the results were delicious! We cooked the corned beef in a mixture of half beer, half water and the meat came out really tender. We also added turnips and parsnips with the other veggies. We served the meal with Jack Daniel's horseradish mustard. This will be our new St Patty's Day tradition!

Spaghetti Pie II

My mom used to make this when I was little, always a favorite! I added diced eggplant to the ground beef and replaced the cottage cheese with a layer of shredded italian cheeses. I used a 1 lb box of spaghetti and was able to make 2 pies, one to eat and one to freeze.

Perogies

I found the dough in this recipe to be too sticky and as others noted, not enough for the amount of filling. I omitted the egg in the second batch of dough I made and just added enough water to create a good consistency. I didn't try this filling but I made one with the following ingredients: butter, milk, clove garlic, grated onion, fresh parsley, parmesan cheese, and nutmeg, salt ,and pepper to taste. It turned out phenomenal!!

Pumpkin Puree

I found the best way to make pumpkin puree is to cut the pumpkin into small chunks, cover them with water, and simmer them for about 30 minutes until tender.

Perfect Pumpkin Pie

For someone who doesn't really like pumpkin, this pie was awesome! I didn't have any ginger, so I put in an extra half teas of nutmeg. I also chilled the batter for a half hour before pouring it in the shell. I would recommend baking the shell (i used graham cracker) prior to putting in the batter.

Hawaiian Bread II

The consistency of this bread was wonderful. I made it for a buffet breakfast for 50 people and it was gone it minutes! I recommend substituting coconut extract and to make the loaves the size of 2 fists...they bake much quicker this way

Basic Crepes

The batter was delicious but I couldn't figure out how to keep the crepes from sticking to the pan..I think the heat may have been set too high.
