Sausage Egg Casserole

Reviewed: Aug. 17, 2007
HUGE HIT! Brought this to an overnight July 4th party. I was asked to bring it every year. I made it with lowfat evertyhing - cheese, egg beaters, smart balance butter, microwaved the sausage for a minute to get the fat out - they had no idea. Next time I'm using turkey sausage.

Lasagna Spirals

Reviewed: Oct. 30, 2006
What a fabulous way to make lasagna! My husband is not a brocoli fan, so I used spinash on my first go. The second time I made it with beef. I cooked lean ground meat in a medium pan, drained the fat, and added the tomato sauce. I let that simmer while I cooked the noodles & put together the rolls. When the roles were done, I spread the meat sauce over the top and added a bit more cheese. The best part about this recipe is how easy it is to mind portions. Have 3 rolls instead of a 4*4 piece of lasagna.

Bourbon Pecan Chicken

Reviewed: Sep. 8, 2005
After I took the chicken off of the heat, I poured the sauce over it right in the skillet. I covered it & let it sit for a while. I served the chicken & sauce over a bed of mashed sweet potatoes. It was unreal. My boyfriend has renamed this "Go in 60 Seconds Chicken".

Brenda's Lasagna

Reviewed: Jan. 26, 2005
This has to be the easiest lasagna recipts of all time. I used Barilla Mushroom & Garlic pasta sauce. I didn't have ricotta so I just used mozzarella, chedder, and some romano. It was delicious. My boyfriend & his brother said it was better than their mother's. I don't want to go there, but it was definitely better than my usual version which takes twice as much time & effort.

Fettuccine with Broccoli and Chicken

Reviewed: Oct. 14, 2004
This dish depends entirely on the Alfredo sauce you use. I used a sauce I know I like, and it came out great.

Creamy Blueberry Pie

Reviewed: Jun. 14, 2004
My boyfriend thinks it's the best thing I've ever made. Used brown sugar for the topping instead of white & used canned (in water) blueberries.

Easy Tortellini Soup

Reviewed: Feb. 19, 2004
This soup is excellent! I used tomatoes with Italian seasoning already in them. The tortellini didn't get as fat as they do when cooked in water - but they were perfect. I made it for just two of us. We ate the rest of left overs the next day - it was definitely better fresh.
