I have been making rolled sugar cookies for years. This recipe is the easiest one I've used for rolling and using cookie cutters. It was very easy to work with. I used powdered sugar instead of flour for rolling out dough. (Hint: put sugar or flour in a shaker so you don't use too much, and it is easier to distribute evenly on the surface.) I only used two eggs in the recipe, because that was all I had, and they still turned out great. If you are not going to frost them, you may want to add more sugar to the recipe because they aren't very sweet. But, if you are frosting them, they are perfect! I divided the dough into four parts and wrapped in plastic wrap before refrigerating. This way I could open each ball and roll out on the plastic wrap, while sprinkling powdered sugar over top of dough. If you work with only a portion of the recipe at a time, it doesn't get too soft and sticky before you have your cookies cut out. I got about forty-two 1/4" cookies (3" X 4"). Can't wait to frost these pumpkins! I'm using a butter frosting recipe from this site. Will let you know how that goes! I am giving this recipe a five-star because of how easy it is to work with.
