Chicken Tortilla Soup in the Slow Cooker

This is a great tasting soup! My family loved it. The changes I made were that I used chicken taco seasoning, just one can of corn instead of two, and I used one can of refried beans and one can of black beans (rinsed and drained). This recipe is a keeper and I will make it often. It's perfect for the cooler months.

Hearty Beef and Two-Bean Chili

This was really good and will become my new go-to chili recipe. It has a nice flavor and is hearty. I made a couple of small changes - I used just one can of diced tomatoes which I didn't drain, I also used pinto beans instead of kidneys but I could see using any combo of great northern, pinto, black, or kidney beans with this. I didn't have tomato or vegetable juice so I substituted water, I added an additional 1/2 tsp. salt and also a bay leaf. Next time I think I'll try adding a can of spicy V-8 juice for a little more kick. I served this with warm tortillas and butter but usually serve cornbread when we have chili.

Addictive Sesame Chicken

Excellent! I doubled the recipe and the only thing I did different was to add just 1 cup of sugar instead of the two required for doubling. I also didn't have sherry, so I left that out. No one noticed a difference. I also cooked the chicken in just 2 teaspoons of canola oil.

Kielbasa and Kidney Beans

Delicious! I only had A-1 sauce, which my husband doesn't care for, so I substituted chili sauce for the steak sauce and it gave the meal a fabulous kick. Will be adding this to our meal rotation. Thank you!

Pumpkin Bread VI

This was very yummy. I used 2 cups of whole wheat pastry flour instead of 1 cup each of wheat and white flours. I used applesauce in place of the oil and added 1/2 tsp cinnamon in place of the allspice (I had none on hand) and 1/2 tsp. of nutmeg as the other reviewers suggested. I also added 1/2 cup chopped walnuts. I will definitely make this again.

Taco Casserole

Super-Delicious Zuppa Toscana

Very nice recipe! I used turkey sausage and half n half to make it a bit less fattening. I also cooked the onion and garlic in olive oil as opposed to the bacon fat. I used kale which held up quite nicely in the soup. Will definitely make again.

Applesauce Cake

Very yummy. I used whole wheat flour and also one whole egg like the previous reviewer. I am at high altitude and the cake wasn't ready at 25 minutes so I increased the oven temp to 375 and baked another ten minutes which did the trick. I didn't have raisins on hand so I used 1/3 cup chopped walnuts. It was a nice healthy dessert and I will make it again.

Roasted Garlic Cauliflower

This is my new favorite way to eat cauliflower. It's very yummy. My youngest child dislikes parmesan so I cut back on that and used Mrs. Dash. Will continue to make this often.
