WOW! These ribs were out of this world. We made a double patch which was definetly needed and they were amazing! Will definetly make these again as they are a company quality recipe.

Pavlova

As a kiwi-phile just back from New Zealand I would say that this recipe is excellent. You can grind normal white sugar in a coffee grinder, set at espresso (fine) to produce the fine castor sugar for the recipe. I make mine in a pie plate covered in parchment paper. The consistency is somewhere between angel food cake and cotton candy. I use fat free cool whip on top with fruit. A beautiful dessert!

Dinah's Stuffed Mushrooms

Out of the 20 appetizer recipes I have ever tried, this recipe was the best. Lots of compliments and even though the ingredient list seems long, it's a very quick appetizer to make. This is definetly a staple of mine for entertaining from now on. (Oh I used margarine instead of butter and reduced fat mozzarella, no need for extra sat fats).

Sweet and Sour Green Beans

Looks terrible, tastes amazing! used fresh green beans and turkey bacon. Added a little white wine to the flour part as there wasn't much grease from the turkey bacon. These will definetly become a weeknight veggie staple.

Chicken with Peas and Quinoa

I prepared this with trader joe's whole grain couscous bc i ran out of quinoa. The peas were delightful and the dish was much more flavorful than i expected given the simple ingredients. will make again

Chicken Piccata II

I gave this recipe 4/5 stars for being an excellent weeknight recipe but not something i'd serve at a party. I added capers and some cooking white wine. I also tried to thicken sauce a bit with cornstarch. I breaded chicken a few hours befor cooking and had to double the flour garlic powder and paprika mixture to cover chicken sufficiently. I also used smoked paprika rather than reg paprika. After browning chicken in evoo (did not use butter) and making sauce I combined both topped with lemons slices and capers and baked for 25-30 min on 375 just until cooked through. I served with fried (in cooking spray) plantains with a homemade cajun dipping sauce for a fun twist. yum!

Taco Pie

crescent rolls- used low fat ones. also used fat free sour cream, used fat free refried beans and salsa and layered it in. covered with small amount of shredded cheese then shredded lettuce and cilantro dressing. Improved the healthiness, fiber content and it was a huge hit. Omitted the chips.

Bolognese with Homemade Noodles

I was worried that this recipe was too plain to be good. Not so! Very tasty and affordable weeknight dinner. I used spaghetti squash instead of pasta. Will definetly make again. Froze half of the sauce and the other half lasted 3 nights for my husband and myself.

Frugal Pumpkin Pasta

I am very picky with sauces and I loved it! Only changes I didn't have fat free half and half so used 1% milk and 3/4 cup nonfat yogurt. I probably used 2-3 oz of goat cheese as the full 8 oz would have packed on the calories and fat. With the reduced amount of goat cheese and addition of nonfat plain yogurt the sauce was still creamy, not too rich. Served on top of spaghetti squash yum! Will make again.

Balsamic Cream Sauce

Great nightly dinner! I added baby bella mushrooms and substituted 1 cup skim milk and 1/2 cup low fat sour cream for heavy cream. yummy!!! will definetly make this again

Kickin' Collard Greens

This was my first experience with collard greens being a yankee and all. They were really good. Served it with busy day chicken. Modifications: I used turkey bacon and no oil. I simmered the greens for 1.5 hours as per another reviewer's suggestion which made the stems much more edible and the greens were not smushy. My only complaint was similar to another reviewer's that the 3 cups of chicken broth made it a little too salty. Would use half chix broth and half water next time. Will definetly make it again.

Busy Day Chicken

I love to make recipes healthy but taking off the skin on this chicken left it very dry. The second time I made it I left the skin on and it was fabulous! Also I stuffed the chicken with chopped up apples which really added to the flavor. Mississippi brand BBQ sauce was better than the sweet and tangy. NOTE- you do not have to completely cover the chicken with sauce and water for it to cook. I used one bottle of sauce and then filled that bottle with water and poured it in.

Slow Cooker Chicken and Dumplings

This is wonderful on a cold day- my husband loved it! I cooked on high 3.5 hours then added biscuit dough for 1 more hour on high. So simple and easy. Will try with frozen peas and carrots next time and will omit most of the water as other reviewers have suggested. I was very surprised by how much I enhoyed this simple recipe.

Spinach, Red Lentil, and Bean Curry

Very good. I equate it to the indian buffet lentils down the street which I am always craving. I wonder if you could slow cook all the ingredients except the yogurt? My husband went for seconds even though he was stuffed which is always a good sign. I added extra chile powder and it was a little too spicy- so I would stick to the proportions as listed.

Cod Curry

We had fresh cod and at night number 3 I needed to make it differently then butter and breadcrumbs. This recipe was GREAT! My husband loved it. A big hit! Served with a lil garlic naan. Easy and wonderful!
