Baked Dijon Salmon

I was a little skeptical to make this b/c of some of the reviews. I also was concerned to flavors would overpower the salmon-I usually just mainade it. However! I thought this was so very good! I followed recipe exactly-except didn't have fresh parsley, so I used dried-and it was wonderful! I cannot wait to make this dish again!!!! Watch out, you may get addicted to this one!

Grilled Salmon I

This is an excellent marinade for salmon. It is very good. Marinate for as long as you can, the longer the better. I cannot wait to make this again.

Juicy Roasted Chicken

This was my very first ever roasted chicken and I was so proud how it turned out! I used real butter-I don't ever use margarine-and maybe next time will take the advice of another reviewer and use half as much. I did add some onion and garlic inside it, that is only changes I made. I cooked breast side down-never done this chicken thing before-but then read on here someone did that to make the breast meat juicier, and it appears to have worked. My mom and husband loved it, there just wasn't enough left over. This was so easy I can't wait to cook it again.

Deep Dish Brownies

These brownies are good, but not the best that I have ever had. I made the recipe-get ready for this-without changing anything! I wanted to see how they would turn out without changes. Very good, a bit cakey but overall a good brownie recipe. Maybe if I make again, I will take advice of other reviewers.

World's Best Lasagna

This was good, but my Aunt Patsy's recipe is the best. I would post it on here, but recipes I posted two years ago still haven't been put on here. This made alot of sauce, I used it all in the lasagna and it made it too saucy, if I make again, I would just freeze the rest. I used ground turkey and turkey sausage, and it was good. Good recipe, but not the best.

Crab Stuffed Flounder

This was very good. I made it last night for dinner and my fiance loved it. The only thing I changed, was I did not make the egg yolk/mayo sauce, and it was still very good. Oh, and I added some Old Bay and lemon juice on top before I baked it. Very good recipe.

Kitchen Sink Meatloaf

A girl at work made this and I had to have the recipe. I love this meatloaf (and I hated it as a child) I have never made one without a glaze on top before, but it was really good. I used ground turkey instead of beef and it was still very good. I can't wait to make it again!

Potato Salmon Patties

These were very good. I wasn't sure about the potato, but I did use the potato flakes and they were very good. The only change I made was I used green onion instead of white (a must) and I just browned them in the pan and finished in the oven. They had a bit of trouble staying together, maybe I will add another egg or milk next time. These were very good, I will definitely make them again.

Broiled Tilapia Parmesan

I thought this was very tasty for a quick dinner. I scaled for two servings, but my way-I halfed the cheese and butter, used only 1 tbs. of lemon juice, but left the mayo (used lite) and seasonings the same. This was very good!

Baked Pork Chops I

I made these for my New Year's Day DInner and served with cabbage and black eyed peas. My dad said these were some of the best pork chops he had ever tasted! I highly suggest the wine, it adds great flavor. The only change I made was adding some onion I chopped and sauteed with garlic to the soup mixture-I poured over the chops before baking. I thought about not cooking the whole 11/2 hours, it seemed so long. However, I did cook the whole 11/2 hours and they were so tender and delicous. I would defintely make these again, and would be great for company.

Chantal's New York Cheesecake

This was my first ever attempt at Cheesecake and it turned out perfect! I read quite a few reviews, so I took a few tips of advice. I had to purchase a springfoam pan for this recipe. I followed the recipe almost. I used 1 1/4 cups of graham cracker crumbs and doubled the amount of butter (and used real butter) I also added about 1/4 tsp of cinnamon to the crust and about a teaspoon-tablespoon of white sugar to the crust. I added about one tablespoon of lemon juice to the cream cheese mixture. I used regular cream cheese and whole milk (though tempted to buy the reduced fat cream cheese and lower fat milk, I didn't want to chance it and compromise the taste) I greased my pan very well and did use a version of this crazy water bath I had read about. I put about 1" of hot water in a 9X13 pyrex and put it in the oven on the rack directly under the rack the cheesecake was on. I baked for one hour on 350 degrees and never even opened the oven door! I wanted to so badly, but was afraid it would mess the cheesecake up. I let it cool for the full amount of time, and when I took it out, It was golden brown on top and not one crack and It did not sink either! the taste was excellent, will definitely make this one again! This will be my cheesecake recipe-it tastes store bought.

Chicken Enchiladas I

These were ok, I made them without reading some of the reviews first. I should have used green chiles instead of green pepper. The sauce was very runny, so the water wasn't needed. These were ok, but I probably would not make them again. My boyfriend liked them better than me. I think if you used enchilada sauce instead of tomato sauce they would be better.

Chicken Marsala

I thought this was very good. I used a bit less olive oil and butter, and added extra mushrooms. I would prefer a thicker sauce however. i made raoasted garlic mashed potatoes with this, and the sauce poured on top was delicious. I would make again.

Linguine and Clam Sauce

I thought this was very good. I added mushrooms and onions. I used light butter and wheat pasta. I used dried parsley (that is waht I had) and I added a small amount of dry basil. It was pretty good. I made it for my boyfriend because he likes this dish so much, and I liked it better than him.

Chocolate Eclair Dessert

I made this last night and it turned out well. I used reduced fat graham crackers and lite cool whip and it tasted just fine. I have had this dessert before, a co-worker's wife would make it for him to bring to work. I layered the crackers and pudding and let it set up for about 1 1/2-2 hours in the fridge before frosting. I warmed the frosting in the microwave on defrost for about 20 sec and it was easy to frost. Milk chocolate is good on this. I would definitely suggest making this the night before-some of the graham crakcers are still crunchy otherwise. The next day, they are softer and it is much better. I will definitly make this again, it is very easy and yummy.

Bourbon Pecan Chicken

This was so very good! I made a few slight changes upon reading some of the reviews. First, I dipped the chicken in a egg white and milk mixture. Next time I will chop the nuts in a food processor-most of them stuck to the chicken , but if the nuts had been chopped finer they would have stuck a bit better. I omitted the clarified butter, I didn't even want to attempt that. I use olive oil, which is healthier anyways, and browned the chicken 5 min on each side. I then finished in the oven for 25-30 min on 350. I also did not use 3/4 cup of unsalted butter in the sauce-it seemed so much-I used 1/2 cup instead (still a great deal) and I thought the sauce was fabulous. It may have been richer had I used the full amount of butter, but I thought it was just right. I used Jim Beam in the sauce, and served steamed vegetables with the dish. My boyfriend loved it, and I will definetely make this again.

To Die For Blueberry Muffins

These were very good. Next time I will try applesauce in place of the oil and see how they turn out. These were yummy, expecially the topping. I used frozen blueberries, and they turned out great.

Honey Bun Cake I

This was so yummy! I made this last night to take to someone's house for a basketball game. Well, my boyfriend (and I) got into it when it was still warm! It was very good just out of the oven. Next time, I will probably try light sour cream or lowfat plain yogurt and see if the great flavor is still there without some of the fat. I wondered if you could substitute applesauce for the oil, as you can in some recipes? Or decrease the amount of oil, without losing the great taste. I will definitley make this bad boy again!
