Banana Bread I

excellant and easy ! I used whole wheat flour ,raw sugar , energ-g egg replacer ,4 bananas ,a dash of cinnamon and 1/2 cup of chopped walnuts . It was a big hit with 4 generations :) Will definatly make this again .

Gourmet Sweet Potato Classic

my family loves this !I adapted it to fit our vegan diet by using ener-g egg replacer instead of the eggs , soy creamer in place of the cream ,earth balance margarine in place of the butter and whole wheat flour .It tastes as rich as the original version !

Orange Muffins

like others who made this recipe I found the batter too dry so added another 1/4 cup of OJ . I used whole wheat flour ,3 times the grated orange peel as the recipe called for ,omitted the walnuts in favor of craisins and used a bit more brown sugar in the topping :)I also used Ener g egg replacer instead of 2 eggs and raw sugar instead of regular granulated . My husband loved these and I will add them in to my regularly prepared muffin recipes .Next time I think I 'll add some vegan dark chocolate chips or perhaps the walnuts ....YUM :) thanks for the recipe !

German Apple Cake I

I tweaked this recipe a bit and the result was much lower in fat , healthier ,vegan AND tastes richer than the original :) in place of 2 cups plain flour I used 1 cup of whole wheat and 1 cup of cake flour, ener-g egg replacer instead of the 2 eggs, 1 cup of unsweetened applesauce in place of the oil , 11/4 cup of dark brown sugar in place of 2 cups white and I added 1/2 cup of rum soaked raisins (i used whelers vannille') and 1/2 cup of chopped walnuts. as the cake was cooling i made a simple glaze with powdered sugar ,whalers vanille and a dash of cinnamon .This cake was very good and drew raves from my husband as well as visiting friends .

Pan-Fried Asparagus

easy and elegant . I added the zest of 1 fresh lemon rind during the last few minutes for added flavor and a lovely presentation .My husband raved about this dish and it has become a regular at our house .

Mom's Zucchini Bread

excellant recipe ! I replaced 1 cup of the plain flour with whole wheat flour , used unsweetened applesauce in place of the oil, reduced the sugar by 1/2 a cup and used ener-g egg replacer for a much healthier ,vegan version . The bread came out beautiful , moist and tasty :)

I baked mine in jumbo muffin pans and veganized the recipe by using Ener G egg replacer and earth balance margarine . I also added cinnamon, chopped walnuts and dark sugar to the batter . for more health value replaced half of the white flour with whole wheat flour . These were terrific and drew raves from everyone who tried them :)

Beat and Bake Orange Cake

I converted this to a vegan recipe by using enerG egg replacer , soy yogurt in place of the milk and turbinado sugar instead of white sugar .to this I added 1 cup craisins ,1/2 cup of chopped toasted pecans and 2 ounces of coarsely chopped vegan white chocolate . Baked in a bundt pan this cake was a huge hit at my husbands birthday party with everyone and 2 people left with the recipe :)

Cottage Cheese Roast

My Vegatarian husband and I love this recipe as do our meat eater friends who we made this for as well. they were amazed that this was not a traditional meat-loaf and even asked for the recipe to make at home :) It really is amazingly 'meaty' but its hard to believe cottage cheese and cornflake mush can produce this untill you actually see and smell the finished product . This has become a new staple entree . I add a 1/4 cup each of finely chopped onion and bell peppers to this recipe and top it with a layer of ketchup just the way my husband likes it :) I also use more corn flakes than the original recipe called for and let it set for 15 minutes before serving .

Martha Washington Candies

These are really excellant ; easy to mske and delicious . We used an extra cup of corsely chopped pecans and dipped the candys 1/2 in the melted chocolate . The set up time is the only lengthy part of making these , so we worked on other candies in between chilling times . thanks for adding a new candy to our Holiday candy making tradition :)
