Feta Cheese Foldovers

I made this for a baby shower and it was a big hit! But I made several changes to give it more color and flavor, per other people's suggestions. I used garlic/herb feta cheese and added 2 T. chopped black olives, 1/2 c. toasted almond slices, 1/4 c. roasted red peppers, chopped and one more egg. Also, I used phyllo shells instead of the pastry dough. This was MUCH EASIER! I scooped 1 t. into each shell and baked at 350 for 5-8 min. The colorful ingredients made for a great presentation in the shells. I recommend buying 60 shells (4 boxes) for this recipe. Also, I made the feta mixture ahead of time and froze it. Then thawed overnight before baking and serving.

Easy Peach Cobbler

The cream cheese and cake mix make this recipe rich and delicious. I used two large can of peaches instead of fresh peaches. Also, I substituted brown sugar for white sugar. I blended the cream cheese, cake mix and butter with a pastry blender to make sure it was well blended. Also, I added 1/2 t. of nutmeg with the cinnamon. Very Yummy!

Super Hot Cereal Mix

This is a great way to make a hot breakfast very INEXPENSIVE, very HEALTHY and very EASY. I double the recipe and we only eat 1/2 cup serving each morning so it lasts for 2 weeks. I mix it in a 2 gallon freezer bag. I've added walnuts and/or almonds to give it more texture. **Update, I recently started adding 3 t. cinnamon and 1 c. wheat germ to the double batch. Much more flavor and sticks with you longer.

Easy Herb Roasted Turkey

Very flavorful! I combined the oil and herbs the night before. Also I used my hands to rub the herb mix under the skin and on top of the skin. I also used some bay leaves and garlic. I filled the cavity with lemons, whole garlic cloves, celery, onion and carrots. Instead of water, I used white wine in a roasting bag w/ a little bit of flour. The flavor and color was AMAZING! I've been using the leftovers in casseroles and it is quite tasty. Very easy for my 1st turkey! I got RAVE reviews! I'll make every turkey like this one!

Turtle Cheesecake from Nestle® Nesquik™

This is the best cheesecake I've made yet! I would suggest adding only 1 1/2 cups of the batter to the melted chocolate chips so that there is more yellow batter in the cheesecake. Also, be careful to only use the given amounts of chocolate syrup and carmel sauce--too much makes it a mess.

Easy Chocolate Bundt Cake Glaze

This was easy to make and delicious flavor. I used giradelli (sp) chips which made it awesome! Unfortunately, I made it ahead of time and it didn't reheat very well. The consistancy changed so it wasn't very pourable and it re-hardened very fast. I've tried to reheat it twice now with the same results. Maybe I'm doing something wrong.

Strawberry Cake Cookies

I made this as directed for a bridal shower. Except I poured the batter into a large jelly roll pan (15" i think) and baked for about 15 min. Then after cooling for 5 min in the pan, I used a heart shaped cookie cutter (about 3") to cut out about 18 hearts. It made less than I expected and they were kind of fragile. This was very easy! I will probably make again and just drop by spoonful onto the sheet.

Antipasto Pasta Salad

Very yummy! Great hit at a potluck. I made a few changes based on what I had and personal taste--tri-color pasta; romano cheese (instead of asiago); sliced (not chopped black olives); grape tomatoes (halved); marinated artichokes (undrained). Also, I didn't have italian dressing mix so I used the artichoke marinade, garlic powder and italian seasoning and omitted the vinegar, parsley, oregano and oil.

Dijon Mashed Potatoes

Very yummy twist on mashed potatoes! This recipe took 20 min start to finish and very little effort. It reminds me of potato salad with the mustard flavor. I froze some of this b/c it made a lot for just two people.

Banana Pudding Cake

This is a moist and delicious cake! A nice change of pace from banana bread b/c it isn't as dense. I used 3 bananas and added 1 c. semi-sweet mini chocolate chips. Also, I used a tub of whipped cream cheese frosting instead of making it (fast and easy!). I baked this in a 13x9 pan to make it even easier. I highly recommend this recipe for potlucks and parties b/c you can make it the day before. Yum! This will be on my new list of favorites for easy and tasty!

Lasagna Alfredo

YUM! A bit labor intentsive but worth it! I did follow the layering as directed. I used the Quick & Easy Alfredo Sauce (which I LOVE!!!!) from this site to save $$. Also, I subbed turkey for the chicken and added garlic powder and italian seasonings to the ricotta/spinach mixture. I had extra stuff so I actually made an extra small pan and froze it. I just pulled it out of the freezer this week (1 month later). It was a bit dry but more alfredo sauce cured that. I served this with a caesar salad and garlic bread. Good for company b/c can be made ahead.

Great basic recipe to start from. Very easy to prepare ahead, looked nice and well-liked by everyone. Good flavor and froze beautifully. I made some additions/substitutions for my tastes: cheddar cheese; bacon; green onion and roasted red pepper. Omitted parsley and pimentos. Great recipe for bruch with overnight guests. I served with ambrosia.

Cheese Cake Cups

I love how easy this recipe is and still has great presentation! You can make ahead and chill. I served with sliced strawberries (bought frozen, then thawed) and caramel sauce and mini chocolate chips. Also, I made them in foil muffin cups. This is one of my faithful recipes for company and parties.

Restaurant Style Chicken Nachos

I made some changes to this recipe to make it faster and healthier based on some other peoples comments and our preferences(perhaps I don't have the right to review but I like my changes :). First, instead of sauteeing chicken and onions, I used a can of cooked chicken breast, drained and mixed with a packet of taco seasoning. Then in a pie plate I combined seasoned chicken, salsa, 1 can black beans (drained), 1 cup frozen corn, 1 can sliced black olives (drained) & 1/2 of green onions. Then I sprinkled shredded cheddar cheese, diced tomatos and remaining onions on top. I baked for 10 min and served with tortilla chips, sour cream and guacamole. This was a fun and easy Friday night dinner. I will definitely add this to our list of regulars!
