Mediterranean Chickpea Salad II

This is a great summer salad. I made some changes per the reviews & my taste: balsamic vinegar, cilantro (instead of parsley), feta cheese, red onion, black olives. Marinating overnight is a good ide but not totally necessary. I like it over a bed of spinach or just plain. Thanks for the healthy, tasty salad!

Buttermilk Honey Wheat Bread

I'm just beginning to use my breadmaker and put this in just before church. I was a little concerned I would come home to a burnt mound but it came out beautifully. Everyone loved it! The buttermilk/honey/wheat combination was delicious! I will put this on my list of regulars!

Garlic Chicken Stir Fry

A bit different than my normal stirfry and used the stuff I had on hand. The taste was not as flavorful. Maybe marinating the chicken in soy or teryaki sauce would help increase the flavor.

Stuffed Shells I

This was great! I made a few changes per some reviews I read and what I had on hand. I subbed ricotta cheese for cottage cheese; used dried herbs (about 1 t. of each) instead of fresh and used more mozz cheese. I also added a box of spinach, thawed and drained well to the cheese mixture. Also, I added about 1/4 t. nutmeg to compliment the ricotta. Per other reviews, I cooked the pasta a little less and put them in a cold bath after draining them. I may not do this next time because they were a little tough. Also, per other reviews, I covered w/foil for 20 min of baking and then uncovered for another 20 min. You definitely need a pan larger than 13x9 or 2 pans b/c it makes a lot. I'm thinking I will freeze half of the cheese mixture next time to make it again later (then I just have to cook shells, assemble and bake). It makes a ton for 2 people (we ate it for 4-5 days!!). Also, I didn't need to use a bag to pipe it into the shells as others suggested. It was pretty easy to use a spoon to fill the shells. I'm not usually into vegetarian meals but this one was very filling. This is better than my mom's version of stuffed shells (w/meat and bread crumbs!) b/c it is more saucy. Good for company!

Strawberry Cake Cookies

I made this as directed for a bridal shower. Except I poured the batter into a large jelly roll pan (15" i think) and baked for about 15 min. Then after cooling for 5 min in the pan, I used a heart shaped cookie cutter (about 3") to cut out about 18 hearts. It made less than I expected and they were kind of fragile. This was very easy! I will probably make again and just drop by spoonful onto the sheet.

Quick and Easy Alfredo Sauce

I will never buy jarred alfredo sauce again! The store bought stuff is bland and expensive. This recipe is the complete opposite! Its very cheap and wondeful. It's not like Olive Garden but it definitely works for homemade. I used lite butter, cream cheese, milk and cream and they came out fine. I used 1 c. fat free creamer and 1 c. milk. Also, the butter/cream cheese will blend better once the milk/creamer is added. I also used more parmesan and about 1 1/2 t. garlic powder and a little bit of italian seasoning. Mine wasn't too runny or too thick. I'll definitely add this to our regulars!

Warm Apple Buttermilk Custard Pie

This pie combined 2 of my husband's beloved desserts--apple pie and chess pie! This was delicious! I cut back the sugar and butter as others suggested. Kind of custard like. Will make again!

Garlic Feta Dip

I add a least 1 T. of dill weed to give this more color. I think next time I won't blend the mix so that the feta chunks are more visible. I served with cucumbers, carrots, broccoli and crackers.

Cowboy Casserole

Easy and tasty! I used pinto beans instead of baked beans b/c that's what I had on hand. I added 1 can diced tomatoes and more bbq sauce for flavor. I baked the biscuits separately and poured the mix over them to serve.

Mexican Style Cornbread

Easy Herb Roasted Turkey

Very flavorful! I combined the oil and herbs the night before. Also I used my hands to rub the herb mix under the skin and on top of the skin. I also used some bay leaves and garlic. I filled the cavity with lemons, whole garlic cloves, celery, onion and carrots. Instead of water, I used white wine in a roasting bag w/ a little bit of flour. The flavor and color was AMAZING! I've been using the leftovers in casseroles and it is quite tasty. Very easy for my 1st turkey! I got RAVE reviews! I'll make every turkey like this one!

Lasagna Alfredo

YUM! A bit labor intentsive but worth it! I did follow the layering as directed. I used the Quick & Easy Alfredo Sauce (which I LOVE!!!!) from this site to save $$. Also, I subbed turkey for the chicken and added garlic powder and italian seasonings to the ricotta/spinach mixture. I had extra stuff so I actually made an extra small pan and froze it. I just pulled it out of the freezer this week (1 month later). It was a bit dry but more alfredo sauce cured that. I served this with a caesar salad and garlic bread. Good for company b/c can be made ahead.

Southern Chess Squares

This recipe is good for serving buttermilk pie to a crowd. Very easy to make with ingredients I had on hand. Also, the flavor is poplular with a lot of people. I had another recipe similar to this and I will probably follow it next time. I would reduce butter to 1/2 c. and omit pecans. The cake part on the bottom swelled too much and wasn't very crust like. At any rate, with these changes I think it will be closer to the actual buttermilk/chess pie.

Banana Pudding Cake

This is a moist and delicious cake! A nice change of pace from banana bread b/c it isn't as dense. I used 3 bananas and added 1 c. semi-sweet mini chocolate chips. Also, I used a tub of whipped cream cheese frosting instead of making it (fast and easy!). I baked this in a 13x9 pan to make it even easier. I highly recommend this recipe for potlucks and parties b/c you can make it the day before. Yum! This will be on my new list of favorites for easy and tasty!

Great basic recipe to start from. Very easy to prepare ahead, looked nice and well-liked by everyone. Good flavor and froze beautifully. I made some additions/substitutions for my tastes: cheddar cheese; bacon; green onion and roasted red pepper. Omitted parsley and pimentos. Great recipe for bruch with overnight guests. I served with ambrosia.

Cheese Cake Cups

I love how easy this recipe is and still has great presentation! You can make ahead and chill. I served with sliced strawberries (bought frozen, then thawed) and caramel sauce and mini chocolate chips. Also, I made them in foil muffin cups. This is one of my faithful recipes for company and parties.
