Quick and Easy Chicken Noodle Soup
This was a pretty good soup. Best of all, VERY EASY!! MY MODIFICATIONS: 1.) Added 2 cloves of minced garlic when sauteing the onions and celery. 2.) Used a whole rotisserie chicken from the Costco (and those bad boys are BIG) so roughly 1lb. of chicken in the end, 3.) Used 1c. of every vegetable, instead of the recommended 1/2 cup, 4.) Used nearly 1 tsp., instead of 1/2 tsp., of all of the spices called for in the recipe (minus the salt! which I always add sparingly). 5.) I also did NOT use low-sodium chicken broth, as I find that soups just don't have enough flavor when you use that. So I stuck with the regular stuff. 6.) And finally, I cooked the noodles on the side and then added them when the soup was finished simmering (about 2min before I dished it out into bowls). MY VERDICT: I'd definitely make this recipe again!! It's easy and you can pretty much throw whatever you want in here for a delicious and hearty meal.
