Curried Coconut Chicken

This recipe was great. By no means does it taste like what my mom cooks at home. She's from the Caribbean and it tastes completely different. That being said, this tastes fantastic. The only problem I had was it was a little too sweet. Next time I will cut the sugar in half.

Chicken Asparagus Roll-Ups

Wow!!! This was so good. I didn't have any tarragon so I replaced it with thyme and rosemary. I also added some fresh garlic. Other than that, I followed the recipe. This was quick, easy, and good.

Classic Rice Pilaf

This was really easy to make and it came out great. I normally shy away from cooking rice because it always comes out either sticky or undercooked. This recipe was fantastic. I used a whole small onion instead of half because I love onions. I used water instead of the chicken stock and added chicken bouillon because I ran out of chicken stock. I left out the salt because the bouillon is already salty. I also added about a tablespoon of garlic to the last two minutes of simmering the liquid. The rice came out wonderful. Perfectly cooked, fluffy and yummy.

Peppermint Bark

I wait all year for peppermint bark. It is my favorite candy. This recipe turned out fantastic. I lined and 8x8 pan with glad press and seal wrap, and it was really easy to remove the candy. I turned the pan over and pealed away the wrap. I thought the 8x8 made the candy a little too thick so I will probably use a larger pan next time. I also had to use mint extract not peppermint because that is what I had. I just added a little extra to the white chocolate and it was perfect. I used 12 candy canes instead of the peppermint candies. I also turned the candy over and broke it up from underneath. This worked great. Loved this recipe!!

Easy Decadent Truffles

Thank you so much for this recipe. It was so easy and delicious. I only used 2 cups of confectioner's sugar and instead of the semisweet chips, I used one and a half 8 oz semi-sweet baking bars. I think the baking bars were the reason I had no problems getting this to harden. I rolled them out and drizzled with white chocolate. Everyone loved them and could not believe I made them.

Melt - In - Your - Mouth Shortbread

This recipe was super simple and easy to make. The first time I made it, I made it almost exactly as the recipe stated with the only exception being that I added a teaspoon of vanilla. I thought it was a little too floury and not sweet enough. I also used a cookie press, so my cookies were just overdone while I played with the cooking time. The second time I made it, I whipped the butter even longer (about 20 minutes), I used only 1 1/4 cups of flour, used 1 cup of confectioner's sugar, kept the vanilla, and added a tablespoon of brown sugar. I still used the cookie press and baked at 325 for 8-9 minutes. They were perfect!!!!!

Apple Pie by Grandma Ople

So this pie was really yummy, but so difficult to make. I used a pre-made pie crust and followed the other reviewers recommendations to prepare the lattice ahead of time. This was really necessary because the sauce thickens so quickly. I also followed the recommendations and combined the apples with the sauce before pouring into the pie pan. I reserved a few tablespoons of the sauce to top the pie with; I added evaporated milk and microwaved the sauce and the milk then brushed it over the pie crust. The crust turned out golden and beautiful even though I ended up baking this pie for about two hours. I don't know how they fit 8 apples in the pie. I used six and it was beyond full. I had to put a liner under the pie in my oven because the pie was just too full. I even ended setting the smoke detector off because the drippings from the pie were burning in the oven. Next time, I will probably use four or five apples because I had a problem baking this also. After an hour in the oven, the pie was still runny and the apples at the bottom weren't cooked. I ended up baking the pie for another hour and it was still runny but the apples were cooked. Although, I let the pie sit overnight, and it thickened up nicely. Overall, this pie tasted so good that I have to try it again.

Spinach Tomato Tortellini

This was a great recipe. I couldn't find the diced tomatoes with the garlic and onion so I bought the plain one and sauteed an onion in a bit of olive oil before adding the tomatoes and spinach. I only had frozen spinach so I used a 10oz package that I defrosted and squeezed out the excess moisture. Instead of the milk and heavy cream, I used 1.5 cups of half and half. I also omitted the flour and used a cornstarch slurry to thicken the sauce. And, I didn't have tortellini so I used this over bow ties and it was wonderful.

Sweet and Spicy Sweet Potatoes

I normally don't like sweet potatoes. I especially dislike sweet potato casserole. So when my brother requested sweet potatoes for Thanksgiving dinner this year, I was so glad that I came across this recipe. It was fantastic. The balance of spices was perfect so that it wasn't too spicy. Great recipe, this is definitely a keeper.

Caramelized Baked Chicken

These were really good. However, the way the recipe is written, the sauce didn't caramelize. I baked it for almost two hours and nothing. But they tasted great. I just strained the sauce from the pan and served it as a dipping sauce on the side and everyone loved them. Next time, I think I will thicken the sauce up on the stove first.

Chicken Marsala

This was really good and so easy. I think there was too much oil and butter for the four pieces of chicken, so next time I think I will cut that mix a bit. I also added about 1/2 cup of chopped onions and about 1/2 tablespoon of minced garlic when I added the mushrooms. I added about 1 tablespoon of sour cream at the very end and it was just fantastic. I served it over egg noodles and I wish I had left overs for lunch the next day.

Unbelievably Awesome Barbeque Chicken Pizza

This pizza was just AMAZING!!! I used Pillsbury pizza dough that I pre-baked for five minutes. Other than that, I left the recipe exactly the same and it was just to die for. It was by far the best BBQ chicken pizza. Mixing the BBQ sauce and the marinara worked so well together. I would have like more chicken on it, so next time I think I will make two chicken breasts. This is definitely a keeper.
