Classic Rice Pilaf
This was really easy to make and it came out great. I normally shy away from cooking rice because it always comes out either sticky or undercooked. This recipe was fantastic. I used a whole small onion instead of half because I love onions. I used water instead of the chicken stock and added chicken bouillon because I ran out of chicken stock. I left out the salt because the bouillon is already salty. I also added about a tablespoon of garlic to the last two minutes of simmering the liquid. The rice came out wonderful. Perfectly cooked, fluffy and yummy.

Peppermint Bark
I wait all year for peppermint bark. It is my favorite candy. This recipe turned out fantastic. I lined and 8x8 pan with glad press and seal wrap, and it was really easy to remove the candy. I turned the pan over and pealed away the wrap. I thought the 8x8 made the candy a little too thick so I will probably use a larger pan next time. I also had to use mint extract not peppermint because that is what I had. I just added a little extra to the white chocolate and it was perfect. I used 12 candy canes instead of the peppermint candies. I also turned the candy over and broke it up from underneath. This worked great. Loved this recipe!!

Easy Decadent Truffles
Thank you so much for this recipe. It was so easy and delicious. I only used 2 cups of confectioner's sugar and instead of the semisweet chips, I used one and a half 8 oz semi-sweet baking bars. I think the baking bars were the reason I had no problems getting this to harden. I rolled them out and drizzled with white chocolate. Everyone loved them and could not believe I made them.
