Dark Chocolate Cake II

Perfect recipe with no modifications. I baked it in a bundt pan and frosted with a chocolate cream cheese icing. Will make another later this week and try a different frosting so I have an excuse to present another cake to the family.

Creamed Chipped Beef On Toast

Loved the simplicity of this recipe. My son and I just had this for lunch served over a plate of crispy crackers. I added beef bouillon to the thickening roux and though it added an even hardier flavor.

Fluffy Lime Salad

This is a nice great blend of flavor and texture. So easy to make I was able to talk my 16 yr old son through preparing it for us. He doubled the recipe and made the whipped cream using a pint of cream and whipping it with a bit of powdered sugar and vanilla extract. We shared with neighbors mostly to show off!

Cream Cheese Cookies I

Great tasting cookie. I made a half batch using the drop spoon method and filled the centers with blackberry jam. I used 3 oz of regular cream cheese and 1 oz of strawberry cream cheese. Good stuff.

Almond Tea Cookies

These cookies are very easy to make. I added extra almond extract because I love the flavor. It helped to chill the dough once I rolled them into balls so they stayed together better when removing from the pan to the cooling rack. Will make these again and often.

Cream of Celery Soup

Great soup. I added garlic to the mix and used a hand immersion blender to puree the veggies. Super easy.

Poor Man's Sandwich

Like most reviewers, I couldn't resist trying this strange combination (even though I do not particularly care for peanut butter, dill pickles or raw onion). Holy Moly! I loved it! I sliced the onion super thin so it wouldn't overpower the sandwich. It's a surprising and delightful mix of flavor.

Simple Roasted Chickpea Snack

I'm so happy to have a new snack to make the family on weekends. I used rosemary as well but next time I will make a hotter version with more red and chili peppers, maybe even a dash ot hot sauce.

Busy Day Chicken Rice Casserole

The idea of baking uncooked rice made me nervous but I covered the dish in foil and didn't touch it for 1hr 20m. I'm glad I did because the rice was awesome. I did not add the canned mushrooms or onion soup but did add a little chili powder to the mix. I layered some shredded cheddar cheese on top of the mix, added the chicken and a last light sprinkle of onion powder. Next time I'll try different soups and cheeses just to mix it up.

Caramelized Onions on the Grill

FANTASTIC! These were surprisingly sweet and delicious. I halved the onions and baked them for 45 minutes at 400. Next time I will quarter the onions to make serving easier.

Dilly Tomato Soup

Very good receipe that I modified by adding a little extra sugar and a few dashes of worcestershire and tabasco sauce. The dill undertones are delightful.

Egg Noodles

This was my first attempt and I was so proud. It was fun too. I used plastic hangers to dry the pasta. I had them hanging all over the kitchen. A day I'll remember with a smile, especially since my family thought they ROCKED!

Tortilla Soup II

My company caters lunch and I have tortilla soup a few times a month. I just had to make it for my family and this recipe was much more of what I want in a tortilla soup. Fresh and light!
