Carrot Cookies III

Yummie, I made this for Family Day weekend. The cookie idea doesnt appeal to me [as a health fanatic]. The carrots seemed better uncooked [finely shredded], the quantity was smaller though, so I increased the carrots from 1 cup mashed carrot to 1 1/5 cups.

No Fail Bean Pie

Fabulous recipe! I shared the bean filling at a shared meal [with no crust]. Looked country-style baked, was light tasting, [I added a cake frosting to appear more dessert like.]

Easy Oatmeal Muffins

I am looking to try low-sugar snacks, but when I saw these muffins were simple to bake & low-sugar I had a huge smile! The recipe states 1/4 cup of sugar which I added; the reviews state the 'bland' taste was compensated by adding more sugar (brown sugar too!), so I added 1/4 cup of molasses. The molasses worked for a maple-flavored taste, it sweetened the muffins spice-less look! Yum!

Warm Orange Sauce

Should have made more sauce! There is a holiday feast at my community church next week, so I asked to make the desert (for 40+ members celebrating Christmas)! I will make a pudding cake using leftover apple puree & ground "Amish Friendship Loaf". Should have asked the Fellowship Leadership to approve the ™Triple Sec... erg, needed to make more than 1L of Warm Orange Sauce. Was using the recipe above alright, ah well... I used 3 cups of orange & tangerine puree, 2 cups of brown sugar, and margarine [equivalent to butter]. Maybe 2 tsp each of Ginger and cloves will give it some "zip"!

Crunch Drops

I made this recipe with a lower sugar content... so flour, baking soda, salt, shortening, brown sugar, (no white sugar), eggs, (NO vanilla extract, NO oats, NO crisp rice cereal). The cookies are not my thing, that bar...a cookie-bar I think is my favorite dessert. The dough was baked 30 mins in a 9x9" glass baking dish. If I had an after thought on baking the coconut bars; maybe adding 1 tsp of coconut extract would be best).

Nancy's Pumpkin Butter

The pumpkin butter recipe was little trouble (since I have 1/4c of confectioner's sugar in the cupboard). I used packed yellow sugar, just a less. So the deal was "How do I use leftover baked pumpkin (which I puree-ed)? Nancy's Pumpkin Butter recipe could be a spread for baking, tart-filling, or as an appetizer served along side some crackers & head-cheese ball. Maybe my next cooking will be making Pumpkin Crepes served with Nancy's Pumpkin Butter...

Lemon Pie Bars

Try number 2, the lemon-fill at the beginning looked the same both times. Just trying to make sure I measured the full amounts of ingredient to make the filling was upsetting. (Hey, having the first lemon-fill trial finish the bake-time & not solidify was really hard!) I thought I would lower the temperature of the oven by 10 degrees and cook it 15 mins longer. Ta Da... fresh Lemon Pie Bars!!!

Amish Friendship Bread Starter

This starter batter was going well. I have active yeast for the sour dough, and the right ingredients to add to make it a Thanksgiving Pumpkin bread (pumpkin puree, spices, and nuts). So, I realize that I was getting carried away as I added the 1 cup pumpkin puree on the 5th day (NOT the 10th day = BAKING DAY)! You are wondering if the batter went rancid? Nope. All set on Day 10, I added a second 1 cup of pumpkin puree, not too much spices, 4 tbsp of oil, 2 cups of flour, 2 medium eggs. Just so you know, the batter is quite gum-like. I cooked mine at a lower-temp for longer to make sure it was completely cooked!!
