Broccoli with Garlic Butter and Cashews

Delicious! You could almost call it "Asian broccoli". Makes a perfect summer side dish. I was thinking this sauce could really be used on other things too (asparagus, etc.)

Addictive Sweet Potato Burritos

Amazing! I loved this recipie and so did my husband. They do freeze well which is great since it makes so many of them. I just used black beans instead of kidney beans-turns out great.

Tofu and Cheese Stuffed Shells

I thought this was a great recipie! I made it for my (meat eating) family and they didn't even know they had tofu in them. I used 1/2 cottage cheese and 1/2 ricotta instead of all ricotta though.

Zucchini Bisque

I thought this was great! I was surprised how flavorful it is. Even my husband (big meat eater) liked it. I used low fat milk instead of cream and it worked great. It was enough for me as a meal but it would be a great first course for entertaining or just served with a sandwich for lunch.

Stuffed Peppers My Way

This recipe was just great with wonderful flavor! I didn't use the arbonio rice that it called for-I just used regular rice and cooked it up ahead the night before. My husband (who is a huge "meat eater" absolutely loved them too)

Monterey Chicken with Potatoes

This recipe was nothing special at all. I thought it a waste of my time and the ingredients. Sorry... but, It would have been better to make mashed potatoes and seasoned chicken breast.

Tomato and Basil Quiche

This is a great recipe! It's pretty simple but does look and taste elaborate. You could try "spicing" it up a bit by adding some italian sausage or ham to it if you prefer it with meat.
