Quinoa Black Bean Burgers

I haven't eaten meat in a year and from time to time I get a burger craving. This totally helps kill that craving! I always have all the ingredients on hand and it is a very cheap meal to make. Substituting ingredients is really easy as well. I like to use shredded carrots instead of red pepper. I never have buns so I'll just throw the patties in between two slices of whole wheat toast in a pinch. Topped with sliced tomato, caramelized onions and avocado if I have it! yum. I love the bold taste of cumin in it. I always thought the frozen patties from the store were good, but this recipe blows them away. I can't wait to bring it to a BBQ...

Curried Lentils

This is such a heroic dish! Easy to make, easy to alter, and it impresses everyone that I give it to. There is a lot of liquid and usually I end up simmering for an extra 10-15 minutes to fully cook my lentils. Eventually after sitting a while the lentils will absorb most of the juice. The extra yummy liquid is getting all soaked up into the rice anyway– don't worry about it. When I initially boil the lentils I'll add a vegan bullion cube for every two servings I'm making. When I add the coconut milk I like to add a little cumin. I add the same exact amount of curry paste in the ingredient list and it's fine– maybe mine is pretty mild. I like to grate carrots (1/4 cup per 2 servings) and toss them into the lentil mix the last 5-10 minutes of simmering. Extra delicious on jasmine rice and with caramelized onions (with a pinch of cinnamon on the onion).

Mediterranean Couscous

Yes! Next time I'm going to have it sitting next to a fat piece of salmon. I added a vegetable bullion cube to the water as it boiled. I did what some others suggested– grilled a little bit of onion and garlic prior. Substituted parsley for spinach (it's what I had). Everything else was the same. thanks! can't wait for the leftovers for tomorrow's lunch.
