Swedish Meatballs I

Reviewed: Jan. 17, 2009
I too used frozen meataballas from Costco (yum) put 2 cans of golden mushroom (much better than cream of mush) 2 cans of cream of chicken, 1 can evaporated milk, sour cream, worteschire sauce, a dash of red wine (I drank the rest) some garlic salt and lots of pepper. All in the crockpot and then put in frozen meatballs. Stirred the pot and sat back and let it cook. Spooned over egg noodles and it is the best comfort food ever! Have a nice salad and pretend it is healthy Darcie

Campbell's Kitchen Tuna Noodle Casserole

Reviewed: Mar. 8, 2009
I love tuna casserole!! this recipe is one of the best. I used one can cream of mushroom and 1 can cream of chicken and one can of milk. I used the whole bag of frozen peas. This recipes is not good without the peas!!! I did not use pimentos and the recipe confused me...what no cheese?? So i sliced up some cheddar cheese and added it to the noodle mixture.this was comfort food at it's best.

Tantalizingly Tangy Meatloaf

Reviewed: Apr. 20, 2009
I did quite like this however I used 75/25 ground beef and would do this again but with a better meat. I did add a envelope of union soup to the mix and I used apricot preserves. I will try this again because it is the only meatloaf my daughter said was pretty good and she hates meatloaf.

Chicken Florentine Casserole

Reviewed: May 15, 2009
Really liked this as did my kids. Do not use canned spinach EVER and do not use canned mushrooms EvER. Cooked bacon and then sauted chicken in some of the bacon grease with garlic salt. Put chicken aside and sauted muschrooms ,garlic and green onion in butter and added white wine then added the spinach (whole bag) till it reduced a little and squirted some lemon on it. dumped it all on chicken and diced up a little tomato for color and threw that in too. Bake for 30 and tossed some mozz cheese and baked till cheese turn golden. Served over bow ties and nuke some green beans. I did use Half and Half cuz I had some but I would use non fat milk to save on calories next time.

Jalapeno Chicken II

Reviewed: May 23, 2009
This was soo Fab!! I did marinate in tequila lime by Lowrys. Cut fresh Jaleponos in half and spread cream cheese on each half. Rolled chicken up with Jalepo and put two bacona; lenght wise and one width wise on each breast. Barbque (for my first time, I might add) till bacon was crisp. This chicken was so moist and flavorful, there was no noise at the dinner table people to busy stuffing their mouths.

Roast Chicken with Rosemary

Reviewed: Jun. 17, 2009
I don't care for a whole chicken but this sounded so good. I stuffed inside with unpeeled garlic, onions, lemons and fresh rosemary. Rubbed olive oil and garlic and lemon pepper on top and rubbed some butter under skin. I added more rosemary to the top and baked for 1 hour at 350 covered. Added red potatoes and carrots and some chicken broth and baked another hour. Broiled for a few minutes at end to crisp up skin. Super good!!

There were the best pork chops. I made this recipe so much easier by using Mango Papaya Salsa from trader joes. Other than that I followed exactly. Had a salad with balsomic dressing and fresh tomatoes from the garden and yellow rice.

Slow Cooker Beef Stroganoff I

Reviewed: Nov. 3, 2009
I'm sorry to only give this a three. I followed directions except I added some red wine to the meat to make it more tendor. I did add some dry french onion soup as one poster suggested. I don't think I would do that again. I will make this again but not with stew meat. I think this calls for a much better peice of meat.

Lemon Cream Pasta with Chicken

Reviewed: Nov. 21, 2009
This was one of my favorite pasta dishes. I followed exactly EXCEPT I used frest chicken tenders; less chopping. I squirted almost two lemons on it and put in a ziplock to marinate for an hour. I added a drained can of artichoke hearts and baked as posted. Follow the pasta directions exactly but I ended up adding a little more broth than called for a little less time cooking maybe 20 min. It was really good and got rave reviews at my house.

Awesome Sausage, Apple and Cranberry Stuffing

Reviewed: Nov. 27, 2009
This was the best stuffing ever. I used pepperidge farm stuffing mix. The key to this is using sage sausage, turkey sausage is too bland. I did not have dried cranberries but threw in a few raw ones from the bag. I did not taste the apple maybe next time will use two apples. Before putting in oven i poured more turkey stock in and some butter. This was fantasic and east to assemble the night before.
