My wedding day.
About this Cook
Southern born and bred.I'm a Mom to a 4 year old little boy and to 3 Chihuahuas who are like my children & I'm married to a man I'm convinced, I was meant to find. I love to cook & to decorate & have been known to enjoy a cocktail. I love helping others and am a servant by nature.
My favorite things to cook
FAJITAS, fresh Guacamole, PASTA, green salad with tons of fresh veggies and tons of toppings and with homemade dressing, chicken salad bagels, homemade tacos, homemade bread, homemade mashed potatoes, fried green tomatoes, chicken puffs (croissants filled with a chicken salad mixture made with cream cheese instead of mayo and baked in oven and topped with butter and bread crumbs..yum) and banana pudding. ANYTHING SOUTHERN!
My favorite family cooking traditions
THANKSGIVING, Christmas, Birthdays, every Sunday, and most days, I cook a big meal for my family and we eat together at the dinner table and talk about our days. Our 4 year old usually says the Blessing and provides comic relief with what he says. Any meal I share with my family is sacred family time.
My cooking triumphs
I cooked my first Thanksgiving meal(my parents and Aunts usually cooked this meal in previous years) for about 10 people, at my house, a few years back and I did all the Thanksgiving staples (turkey, dressing, green bean casserole, squash casserole, cranberries, sweet potato casserole, etc.) and everything turned out great! I have to admit, it was stressful cooking for so many people and also keeping my house clean for my guests, but having my family and extended family together, at the same table, was worth it.
My cooking tragedies
Once, in college, I cooked a big pot of homemade spaghetti and I added Worcestershire sauce to the ground beef before I cooked it and added it to the spaghetti sauce...needless to say, it was not very good. :-)Other than that, I can't really say I've had any cooking tragedies.

Lizzy's Creamy Chicken Bake
Cooked it tonight for dinner. It was good. We will cook it again for sure! I followed some of the other helpful hints and we added a little white wine, and only used half the bag of onion soup mix and it turned out yummy! I cooked it with angel hair pasta and dribbled some of the sauce from the cooked chicken over the pasta and it was delish! Good recipe for young eaters too, my 4 year old loved it!
