Tom Ka Gai (Coconut Chicken Soup)

I would give this 6 stars if I could. My family LOVES Thai food, and particulartly the coconut chicken soup. Imagine my surprise when I found this extraordinarily simple and quick recipe that is just delicious! My only substitutions were to use low fat coconut milk, to switch the water for chicken broth and I also left out the turmeric. Amazing, fast, and delicious!

Mexican Turkey Burgers

Good but not great. They were tasty, but fairly time consuming, and since time short in our house, I probably won't make again. Also, I am spoiled by the fabulous Ina Garten turkey meatloaf recipe....no other ground turkey recipe can compare to hers!

Peppered Shrimp Alfredo

Like others, I modified this recipe slightly, in my case to make it a little more healthy - used only the olive oil (no butter), and substituted fat free half and half for the cream. We also left out the red pepper (kids don't like it) and used onion powder instead of onion (kids don't like onion either). It was YUMMY!!

Thai Ginger Soup

Excellent recipe after 'tweaking' a bit - instead of water, I used Asian soy ginger broth which I believe added a needed kick, and low fat coconut milk. This is not a spicy Thai soup, but still is very flavorful and super easy. Will definitely make again.

A Pad Thai Worth Making

Wow, this IS a Pad Thai worth making. I followed the recipe to the letter except for adding the eggs and chicken (used only shrimp for the protein) and it came out incredibly tasty. Best of all, it had very little oil, so very little fat. Everyone who ate it, (8 people ranging from age 11 to 55) LOVED it.

Zippy Summer Shrimp

Excellent recipe! We made it exactly as written - it was quick easy and delicious, everyone (ages 12 - 60) loved it! We served it with couscous to soak up the wonderful sauce.

Crispy Orange Beef

My kids liked this a lot. I liked it not only for the taste, but the ease of preparation. I substituted orange juice (just doubled what was indicated) because I did not have concentrate. Next time I will not deep fry the beef but will stir fry to decrease the oil.

Tomato Gorgonzola Soup

Wow, really loved this soup. Changed it just a little to lower the fat, (light cream cheese, fat free half and half) and I roasted the pepper before adding as well. Will definitely make again!!

This was very good (but not on the level of great). Easy and tasty, all my kids enjoyed it. I added and extra tsp of cajun spice but left out the cayenne and it was quite spicy, but not tear inducing.

Cincinnati Chili I

Delicious. I have made several different recipes for Cincinnati Chili and this was the best. I did find that I had to gently boil it down for a bit, as there was a high liquid to meat ratio.

Wonderful Short Ribs

Excellent recipe! I browned the ribs beforehand in a non stick skillet, and then drained the grease. I put the meat and all the gravy elements in a crockpot, stirred it up, and cooked on high for 4 hours. It was delicious - though next time I would serve it the next day to skim off the grease after it sat in the fridge overnight. Short ribs are fatty, and a bit unhealthy, so this step would be worth it.

Amazing Italian Lemon Butter Chicken

Excellent flavor. I would suggest leaving out the bacon, as the dish is rich enough. I just crumbled some up and served it on the side. Time consuming recipe (because of the frying) but well worth it!!

Chicken Asparagus Roll-Ups

My husband made this tonight - omitted the tarragon (we didn't have any), used pepper jack cheese, and didn't use butter (just a spritz of olive oil)....still came out yummy, a definite keeper!
