Spinach and Sun-Dried Tomato Pasta

This is a good, quick recipe. I would not omit the pepper flakes, I would adjust to taste if you do not like heat, as without them I think the recipe would be way too bland.

Chicken Breast Stuffed with Spinach Blue Cheese and Bacon

My family enjoyed this very much, even though I thought they wouldn't because of strong blue cheese is. However, I would make one modification. Instead of flattening the chicken breasts and trying to fold or roll them around the filling, it is WAY easier to cut a pocket in them to stuff them. It looks nicer that way as well.

Asian Orange Chicken

Very good. I felt that it was missing 'something' that would have made the sauce more delicious and complex, but I am not sure what it is. I gave it a 4 because it is good, but not great..and the fact that it is so time consuming would make it less likely to be in the routine dinner rotation.

Baby Spinach Omelet

My 17 year old son found the recipe (he loves to cook but REALLY loves to eat) and made it for himself...he loved it so much he made another 10 minutes later...this is a keeper, easy enough for a teen to throw together and quick to boot.

Sausage Casserole

This is major comfort food, very hearty and filling. I double the meat as my sons like it best with more meat. Eat sparingly though, I bet this one will pack on the pounds...

Peanut Butter Vegetable Chicken Soup

Slow Cooker Chicken Taco Soup

This soup was incredibly easy and very very tasty, everyone loved it. Because of all the canned ingredients, it is high in sodium. To lower the sodium, I used frozen instead of canned corn, no salt added tomato sauce and low sodium taco seasoning.

Chicken Piccata II

Disappointing - mainly because adding liquid to the skillet while the chicken is still cooking loosens and wets the coating on the chicken, making it gloppy. Chicken piccata I on this site is a better bet.

A Pad Thai Worth Making

Wow, this IS a Pad Thai worth making. I followed the recipe to the letter except for adding the eggs and chicken (used only shrimp for the protein) and it came out incredibly tasty. Best of all, it had very little oil, so very little fat. Everyone who ate it, (8 people ranging from age 11 to 55) LOVED it.

Balsamic-Glazed Salmon Fillets

My husband, who is not known for his cooking skills, made this one night when I worked late. It was, hands down, the BEST salmon recipe I ever ate. My kids liked it a little less, as vinegar is a bit bitter, more to the adult palate (they prefer teriyaki salmon). But it would be a great adult dinner party dish, quick, easy, economical and foolproof.

Tom Ka Gai (Coconut Chicken Soup)

I would give this 6 stars if I could. My family LOVES Thai food, and particulartly the coconut chicken soup. Imagine my surprise when I found this extraordinarily simple and quick recipe that is just delicious! My only substitutions were to use low fat coconut milk, to switch the water for chicken broth and I also left out the turmeric. Amazing, fast, and delicious!

Thai Ginger Soup

Excellent recipe after 'tweaking' a bit - instead of water, I used Asian soy ginger broth which I believe added a needed kick, and low fat coconut milk. This is not a spicy Thai soup, but still is very flavorful and super easy. Will definitely make again.
