Like others, I modified this recipe slightly, in my case to make it a little more healthy - used only the olive oil (no butter), and substituted fat free half and half for the cream. We also left out the red pepper (kids don't like it) and used onion powder instead of onion (kids don't like onion either). It was YUMMY!!

Colleen's Slow Cooker Jambalaya

This was very good (but not on the level of great). Easy and tasty, all my kids enjoyed it. I added and extra tsp of cajun spice but left out the cayenne and it was quite spicy, but not tear inducing.

Chicken Asparagus Roll-Ups

My husband made this tonight - omitted the tarragon (we didn't have any), used pepper jack cheese, and didn't use butter (just a spritz of olive oil)....still came out yummy, a definite keeper!

Pineapple Rice Casserole

My husband made this for dinner, and added cooked chicken breast chunks. Everyone loved it. I might cut the brown sugar in half next time, but it was still great as is.....

Zippy Summer Shrimp

Excellent recipe! We made it exactly as written - it was quick easy and delicious, everyone (ages 12 - 60) loved it! We served it with couscous to soak up the wonderful sauce.

Vegetarian Korma

Excellent flavor. The timing is kind of off though, plan for 45 minutes for the potatoes and carrots to cook - or to save time, lightly steam them beforehand. Instead of cream, I used light coconut milk and fat free half and half (in equal amounts) and it worked beautifully.

Fish Tacos

This is a really good recipe. I did not give it 5 stars only because there was WAY too much cayenne as written. I doubled the recipe except only put in 1.5 times the cayenne and it was too hot even like that. And we are a spicy food family - my suggestion is to start with a smaller amount of cayenne and season to taste.

Cincinnati Chili I

Delicious. I have made several different recipes for Cincinnati Chili and this was the best. I did find that I had to gently boil it down for a bit, as there was a high liquid to meat ratio.

Crispy Orange Beef

My kids liked this a lot. I liked it not only for the taste, but the ease of preparation. I substituted orange juice (just doubled what was indicated) because I did not have concentrate. Next time I will not deep fry the beef but will stir fry to decrease the oil.

Chicken Pesto Pizza

This is an easy, delicious dish. I think the Fontina cheese really makes it stand out, as it has more flavor than mozarella. Will make again!

Spicy Sweet Potato and Coconut Soup

Lime Chicken Soft Tacos

It was OK, but it was too vinegary for us. It smelled of vinegar too which was pretty unappetizing. The taste was better than the smell, but not good enough to make again.

Corn and Crab Bisque

It was OK, probably won't be making again. I think a bisque should be smooth and creamy, and this was not, mainly because of the onion (and I think the onion flavor detracted from the crab). Also the proportions seemed off, the flour was not enough to thicken properly.

Tomato Gorgonzola Soup

Wow, really loved this soup. Changed it just a little to lower the fat, (light cream cheese, fat free half and half) and I roasted the pepper before adding as well. Will definitely make again!!

Mexican Chicken Corn Chowder

I altered this recipe slightly to make it healthier and it still came out great. I used 2 cups of fat free half and half instead of the full fat version, and only half the amount of cheese that was recommended. Still was delicious and everyone loved it.

Spinach and Sun-Dried Tomato Pasta

This is a good, quick recipe. I would not omit the pepper flakes, I would adjust to taste if you do not like heat, as without them I think the recipe would be way too bland.
