Egg-Free Low-Fat Oatmeal Cookies

Well, I decided almost 8 months ago to "change my lifestyle" by exercising and eating HEALTHY. Currently, I have lost almost 50 lbs! I made these cookies today and EVEN my unsuspecting 8 yr old son said they were "great". Low fat/lower carb/HEALTHY eating and cooking can be GREAT with recipes like this one.

Dirt Cake I

I made this on Saturday and served Sunday, for Father's Day (for husband & father in-law). My father in-law was shocked and made a face when I brought the flower pot with fake flowers and a few gummy worms sticking out! It was hilarious!!! I put a big tag on the flowers reading "Happy Fathers Day Dad & Opa." It was a very deliscious dessert, and EVERYONE at the table requested for me to make it again some time! I did the recipe exactly. A very FUN and easy recipe. Very light-tasting, yet rich tasting with the Oreo's. A real keeper!!!

Peanutty Chocolate Fudge

I have made this fudge about 3 or 4 times. My 8 yr. old son thinks it's the best in the whole world!!! Freezes really well, and I haven't muffed it up even ONCE! :) I'd rate it a 10 out of 10!

Easy Valentine Sandwich Cookies

Today being February 14th, I made these! I made 2 batches. I read once that it is best to refridgerate dough for 1/2 hour before rolling it out. I did that. This recipe worked out beautifully! The only problem I had was it took me almost all day to make them! They were worth it though...very very good! YUMMY...I'd make them again.

Gourmet Sweet Potato Classic

We were at a cottage 2 weeks ago and a friend I met there told me about this recipe. I tried it out on company last Saturday evening. It was enjoyed by ALL. I followed the recipe exactly and found it to be perfect. I don't think I'd change a thing. I can't wait to make it again for Canadian Thanksgiving in October (or sooner). :)

Chicken Chipulos

I have made this recipe many times and received RAVES! I roll the tortillas and I add black olives to the mixture (as in the recipe I have). I am Canadian and I was visiting my cousin in Brainerd, Minn., when a neighbour of hers brought over this dish. (My cousin had had a brain tumor removed..fabulous neighbours helped her out). Anyhow, I just loved this and noticed the review below is from MN. :)

Frozen Pumpkin Pie

This pie was SO EASY to make...and tasted so GOOD!!! I made the crust in the evening and left it in the (baking stone) pie plate. The next day I just had to finish it...what a breeze, yet it looks and tastes like it would be diffiult to make! My 10 yr old son asked me never to make "traditional pumpkin pie" again...he really enjoyed it. It cut beautifully in my pampered cef pie plate. Thanks for a wonderful recipe!!!

Cake Balls

Hi..I made these about 4 times in 2 days..for treats to take to school for Valentine's day! YUM! I however changed the chocolate dip. I used one small 1" x 2" block of parathon wax and 1 1/2 cups choc. chips..melted in double broiler. Worked well. I also used a scoop to form into balls. Helpful hints from others (thank u) to freez mixture THEN form into balls worked well too! Great recipe. Thank You! Neighbour2

Addictive Pumpkin Muffins

Hi..well I must confess, I'm NOT a big fan of pumpkin, BUT..these muffins ROCK! I made them with whole-wheat flour instead of the white, and I used 2 cups of SPLENDA instead of 4 cups of sugar. I think 4 cups sounds like a lot of sugar. Anyway, my entire family LOVED these. They are a keeper. Thank- you to "MidnightJasmine" for this recipe!

Strawberry Trifle

I made this for a "Good Friday" Potluck. Very good...AND I even used frozen fruit! I put fruit, still frozen, in a calinder and ran it under the cold water tap, then let it sit to drain while I prepared everything else. It was a real crowd pleaser...NOT soggy at all...as mentioned in past reviews using frozen fruit. Maybe because I made it a 1 p.m for a 6 p.m. dinner(?) The recipe states it needs to chill about 4 hours before serving...perhaps others prepared the night before, and that's why it was soggy(???) Anyway, a wonderful, EASY, low cal dessert I will make again and again!

Lighter Banana Muffins

I am always looking for low fat/fat free recipes! This is really quick, easy and YUMMY! Both times I have used this recipe for muffins then made a banana bread! (Bread-bake for 50-60 minutes). I have also used 1 cup of wholewheat flour/1 cup whilte flour. Very moist and loved by all.

Ice Cream Cone Treats

These were really easy and fun to decorate with my 9 yr old son. We made them yesterday for today. They were good except the cones were stale (soft). I am not sured if it was because I stored them in an air-tight bowl after icing or weather they were stale when I bought them (used on the same day they were bought). Anyway, the kids loved them! Great, easy and cheap idea for a little kids birthday party...why waste cake? I'll make them again for smaller kids...a hit! :)

10 Pound Cheesecake

Followed this recipe to the letter...with the exception of the crust..did an oreo cookie base with butter...set well. HOWEVER...I thought while making this that there was one too many sweetened condensed milk in it(?) I still added what the recipe called for (2). I made it at 11:30 am. and refridgerated it. I didn't put the raspberry pie filling on top until 4 pm. When I went to serve it at 6 pm I took it out of the spring form pan and it wasn't set yet...only partially set. It tasted wonderful, and my guests thought it was GREAT, however I was upset that it cut so poorly...it was the consistancy of sour cream. I wonder WHAT I did wrong? Any guesses? Feedback? I may try it again one day with only one can of sweetened condensed milk.

Chicken Enchiladas

Had this on weekend. I liked it, however wasn't thrilled with the enchilada sause on top (could have been the brand(?)). The filling was good, and my husband enjoyed it as well. Nice for a change...I'd make agin (no enchilada sause).

Chicken Enchiladas V

I have a more involved recipe similar to this...but no time, so I tried this one. My family enjoyed it, however if I were to make it again, I would use double the soup/sour cream mixture. I found just 2 TBSP's of the mixture IN the rolled tortilla's wasn't enough. I will make again. Very filling.

Easy Apple Crisp

I made this tonight. It smells wonderful while cooking. My husband and 9 yr old son LOVED it! I liked it but prefer my usual recipe where all is made from scratch. I just didn't like the "cake mix" idea, however wanted to try something different. I will probably make again, as I got rave reviews.
