Peanutty Chocolate Fudge

I have made this fudge about 3 or 4 times. My 8 yr. old son thinks it's the best in the whole world!!! Freezes really well, and I haven't muffed it up even ONCE! :) I'd rate it a 10 out of 10!

Chocolate Eclair Cake

WOW...when on a diet...this recipe is heavan! I made it using all low-fat/non fat ingredients and it was YUMMY still!!!!!!!!!!!! I even used SLENDA instead of sugar in the choc. topping. A very good light dessert. Kids love it too!!!!!!!!!!!!!

Funky Frito Fruckies

Fabulous snack to make and take to a party/get together. It is the "chocolate flavour" with the "salt buzz" all in one! Simply awesome, and addictive! YUM!!!

Salsa Chicken

First of all, the SMELL of this cooking in the oven is SOOOO GOOD!!!!! We are eating more healthy these days so I used low fat monzorella cheese instead of cheddar. It was REALLY good. I used mild salsa, and it STILL was pretty warm & tangy. My husband LOVED it. It was super easy and tasty. I would recommend to anyone who likes salsa! (I didn't add the sour cream this time but I might try it next time).

Low-Fat Blueberry Bran Muffins

Glazed Meatloaf I

I made this using 1 lb ground turkey, and 1 lb ground beef (lean). I used bread crumbs (no sliced bread) and no bouillon granules....I used spices. I DID however make the glaze...it was awesome and enjoyed by the whole family. A nice twist on meatloaf. I'll probably make it this way from now on. :)

Christmas Crunch

Okay..I WOULD have given this 5 stars but I made it TWICE and I couldn't get it to HARDEN!? It TASYES fabulous, but I must be doing SOMETHING wrong(?) The second time I thought that I didn't boil it long enough the first time, so I boiled it longer and it set a little, but didn't get like peanutbrittle or anything (which I think it's supposed to(?) Anyway, I am thinking my mistake is that I DON"T have a candy thermometer....however I am STILL gonna try it a 3rd time because it tastes WONDERFUL! (They say "Third's a charm")! :)

Better Slow Cooker Robust Chicken

Tried this tonight! My husband & I really liked it! I used white wine (no red), and had no gravy mix, so used Cream of Chicken soup (as suggested by others who reviewed previously). My husband had over rice, and I had over pasta.....YUMMY! The olives are wonderful in it! I would make it again...FOR SURE!

Egg-Free Low-Fat Oatmeal Cookies

Well, I decided almost 8 months ago to "change my lifestyle" by exercising and eating HEALTHY. Currently, I have lost almost 50 lbs! I made these cookies today and EVEN my unsuspecting 8 yr old son said they were "great". Low fat/lower carb/HEALTHY eating and cooking can be GREAT with recipes like this one.

Old-Fashioned Chocolate Fudge

Well...this recipe reminded me of the fudge my mom used to make..so I tried it. It took FOREVER to thicken. I had a new candy thermometer I used for 1st time, and it never did reach the temp. it was supposed to. Finally, I completed the recipe and put it in fridge..turned out okay. I just didn't have a lot of luck. It was VERY sugary tasting. I'll stick to the "Chocolate Peanuty Fudge" I usually make off of this site...MUCH better. I'm giving this recipe a 3...not very creamy at all, and I followed recipe exactly.

Quick Peanut Butter Cookies

I was sceptical at 1st.("no flour" they won't be good), but I needed a "gluten free" recipe to make for a friends' birthday treat! She loved them! Of course I saved a few and my husand and son really thought they were great too! I doubled the recipe...put a batch in a mini muffin tin...came out nice and chewy, and perfectly round. I will make these again...of course, I will add choc. chips as well.

Strawberry Trifle

I made this for a "Good Friday" Potluck. Very good...AND I even used frozen fruit! I put fruit, still frozen, in a calinder and ran it under the cold water tap, then let it sit to drain while I prepared everything else. It was a real crowd pleaser...NOT soggy at all...as mentioned in past reviews using frozen fruit. Maybe because I made it a 1 p.m for a 6 p.m. dinner(?) The recipe states it needs to chill about 4 hours before serving...perhaps others prepared the night before, and that's why it was soggy(???) Anyway, a wonderful, EASY, low cal dessert I will make again and again!

Ice Cream Cone Treats

These were really easy and fun to decorate with my 9 yr old son. We made them yesterday for today. They were good except the cones were stale (soft). I am not sured if it was because I stored them in an air-tight bowl after icing or weather they were stale when I bought them (used on the same day they were bought). Anyway, the kids loved them! Great, easy and cheap idea for a little kids birthday party...why waste cake? I'll make them again for smaller kids...a hit! :)

Dirt Cake I

I made this on Saturday and served Sunday, for Father's Day (for husband & father in-law). My father in-law was shocked and made a face when I brought the flower pot with fake flowers and a few gummy worms sticking out! It was hilarious!!! I put a big tag on the flowers reading "Happy Fathers Day Dad & Opa." It was a very deliscious dessert, and EVERYONE at the table requested for me to make it again some time! I did the recipe exactly. A very FUN and easy recipe. Very light-tasting, yet rich tasting with the Oreo's. A real keeper!!!

Sunday Best Fruit Salad

This is a pretty good sized recipe! It was a nice spin on regular fruit salad....refreshing for summer! When I served it EVERYONE thought it was really great..pie filling adds to it...could use Cherry instead of peach...may do next time. A keeper! Thank You. :)

Easy Apple Crisp

I made this tonight. It smells wonderful while cooking. My husband and 9 yr old son LOVED it! I liked it but prefer my usual recipe where all is made from scratch. I just didn't like the "cake mix" idea, however wanted to try something different. I will probably make again, as I got rave reviews.
