Double Layer Pumpkin Cheesecake-Low Fat Version
About this Cook
I am a stay at home mom with an 8 yr. old son and wonderful husband. I worked with adolescents for 16 yrs in group homes before staying home with my son. I have taught him many things about cooking, and we enjoy being in the kitchen together.
My favorite things to cook
I like to cook... crockpot recipes, breads, and bake low fat breads, muffins and more.
My favorite family cooking traditions
My favourite tradition is making a Christmas Strata every year for breakfast. It bakes while we open gifts, and smells great! I also like to make things (treats) for my sons' school for his birthdya, Halloween & Christmas parties!
My cooking triumphs
I am known for making decorative "Doll Cakes" on female children/adults birthdays. I also am told I make wonderful shortbread at Christmastime!
My cooking tragedies
I have no luck with making pie crust! The never-fail recipes...I FAIL!

10 Pound Cheesecake
Followed this recipe to the letter...with the exception of the crust..did an oreo cookie base with butter...set well. HOWEVER...I thought while making this that there was one too many sweetened condensed milk in it(?) I still added what the recipe called for (2). I made it at 11:30 am. and refridgerated it. I didn't put the raspberry pie filling on top until 4 pm. When I went to serve it at 6 pm I took it out of the spring form pan and it wasn't set yet...only partially set. It tasted wonderful, and my guests thought it was GREAT, however I was upset that it cut so was the consistancy of sour cream. I wonder WHAT I did wrong? Any guesses? Feedback? I may try it again one day with only one can of sweetened condensed milk.

Easy Valentine Sandwich Cookies
Today being February 14th, I made these! I made 2 batches. I read once that it is best to refridgerate dough for 1/2 hour before rolling it out. I did that. This recipe worked out beautifully! The only problem I had was it took me almost all day to make them! They were worth it though...very very good! YUMMY...I'd make them again.

Gourmet Sweet Potato Classic
We were at a cottage 2 weeks ago and a friend I met there told me about this recipe. I tried it out on company last Saturday evening. It was enjoyed by ALL. I followed the recipe exactly and found it to be perfect. I don't think I'd change a thing. I can't wait to make it again for Canadian Thanksgiving in October (or sooner). :)
