Peanut Butter Bars I

These were great! I was a little worried because I used natural peanut butter and the bottom layer was really runny when I put it in the pan. I am glad I kept them refrigerated because they do soften quickly at room temperature but all in all, they turned out great. Everyone who tried them loved them and my friend wanted the recipe. I had hoped to find a review saying they work even with natural peanut butter but couldn't find one, so now you know! I'm sure they are firmer with regular peanut butter but I'll save myself the hydrogenated oil! UPDATE: This has become a staple in our house as well as many of our friends. I still prefer natural peanut butter, and I've found Skippy Natural works the best, but you can do with other kinds like Laura Scudders, etc. Just keep them in the fridge!

Saltine Toffee Cookies

DO NOT STIR THE BUTTER AND BROWN SUGAR WHILE IT BOILS!!!!!! I have never made toffee before and I didn't know this. It really should say this in the recipe because they don't turn out like toffee skor bars...more like carmel. They are chewy. I was so disappointed that after I read reviews and realized not to stir the butter and brown sugar (I stirred it a lot, afraid it would burn) I decided to make another half batch just to make sure that was the problem. I also baked them for 7-8 minutes compared with my 4-5 on the first batch. THEY ARE INCREDIBLE, AS LONG AS YOU DON'T STIR!!!! I wish I had known. These taste like Skor candy bars. I sprinkled just a tiny bit of finely crushed pecans on top and they are delish!

Chicken Stir-Fry

Loved this! I used mushrooms, snow peas, red and green bell pepper and onions and I thought it was perfect. I did do 1/3 c. Chicken broth and 1/3 c. Soy sauce, since someone said it was too salty with all the soy sauce, but I bet chicken broth has a lot of salt too. Either way, I loved the garlicky sauce and it just tasted yummy to me. My kids complain about their mouths being on fire so I just did a couple of dashes of crushed red pepper....next time I will do more....it wasn't spicy at all.

Firecracker Burgers

Yummy! Mine fell apart on the grill but I think it was because we had just cleaned the grill and I should have greased it down. We had company coming over and I was able to salvage them and the meal wasn't ruined. However, I must say, if they are called Firecracker Burgers, don't you think Pepper Jack Cheese is more appropriate? I will make these again.

Awesome Egg Rolls

I've never made egg rolls...in fact, I think this was my first time frying anything. They are so good. Just make sure you have mouths to eat them. It was just me and my husband and we overate...talk about a gut bomb. Maybe we aren't used to so much fried food. They are so good though. I served them with sweet and sour sauce and froze half the batch. I wish I'd tried brushing w/ olive oil and baking because that sounds like it might work out. These really are WAY better than any egg roll I've had a restaurant.

Awesome Pasta Salad

Beth's Spicy Oatmeal Raisin Cookies

Delish! These taste great right out of the oven and when they are cool. I'm normally a chocolate person and I've never made oatmeal raisin cookies before but I had a craving for them and these really satisfied. I don't think I'll ever look for another oatmeal raisin cookie recipe!

Bake Sale Lemon Bars

These bars are excellent. I know people complain when you give something 5 stars and then say all the changes you made to the recipe, but I give this 5 stars for the "base" recipe. I'm sure it's still worth 5 stars, but in reading others comments, I doubled the crust. Next time I think I'll just 1.5 it. It's still good and I think the basic crust wouldn't be enough. I put in 4 eggs, the same sugar, 4 1/2 Tbsp. flour, 1/2 c. (actually a little more) lemon juice (use real lemons....it gives it a better zing....though I do live in AZ and have a lemon tree in my backyard....still, I think it's worth it) and then gave it a few drops of yellow food coloring. They turned out awesome! Thanks for the great recipe. I only made changes based on my own tastes and preferences therefore, I'm sure the original here is worth 5 stars!

Crunchy Peanut Butter Balls

These were great. I was looking for a pb ball that was more like Reeses PB Cups, so really rich, and these aren't really rich, but they turned out great and I think I will make them again. they were tasty and easy.

This was awesome! Very sweet but that's what dessert is all about. I loved the chewy brownies. I added skor bits on top and carmel syrup to the layers. Everyone loved it! Wonderful!

Old Fashioned Coconut Cream Pie

My first attempt at a cream pie. I read reviews and used half cream, half coconut milk, and coconut extract in the whipping cream(I used real whipping cream instead of cool whip). The whipping cream was divine! My only complaint, and the reason I gave it four stars instead of five was that the cream part wasn't sweet. Maybe I haven't had cream pie enough and it's not supposed to be sweet, but both my husband and I would have prefered something sweeter. Very good though! It does take quite a while though!

Fabulous! I was looking for a recipe my roommate used to make that is similar but I like this better! I used strawberry banana yogurt (because that's what I had) but I can't wait to try it with coconut because I love coconut! Delish!

Oatmeal Carmelitas

We love these! I made them to take camping and my husband's first bite got an "mmmmmmm" that had a special zing to it, meaning these are a keeper. I didn't measure the carmel, just put a bunch on. Next time I'll put more and fewer chocolate chips. I doubled it in a 9x13 and cut back a bit on the butter. A winner of a recipe!

German Potato Salad

These are good, but very different. My husband lived in Germany and he said this is very similar to what he had over there. We ate it a little luke warm, and it's much better to eat really warm or hot.

Chocolate Mint Cookies I

These are delightful! Everyone tasted them and was asking me how I made them and said how great they were. I tried some with a whole andes mint and some with a half and I don't really know which way I like them better. I just know I like them and will be making them again!
