Three Packet Slow Cooker Roast

I really was not that impressed with this dish. My husband ended up finishing this. It's edible but I won't be making it again.

Swiss Chard with Pinto Beans and Goat Cheese

I was skeptical about this one but my family enjoyed it. I don't like swiss chard or pinto beans so I used about one bag of kale and one can of canellini beans instead. I also didn't put it in the oven at the end. I just left it on the heat a little longer to melt the goat cheese. Overall, great dish.

Carrot, Tomato, and Spinach Quinoa Pilaf

I loved this dish. I had some quinoa sitting in my pantry and needed to do something with it. This was perfect. I didn't have any bouillon cubes so substituted half of the water with beef broth. I also omitted the carrot since I didn't have any and added more spinach and some salt at the end. Overall, quick, easy, delicious dish that I will definitely make again.

Spanish-Style Rice

This is pretty tasty. I had to do quite a bit of subbing since I did not have some of the ingredients on hand. I used brown basmati rice instead of white rice. I also omitted the cumin and the garlic powder. I was worried this would affect the "Spanish" flavor but the salsa I used took care of that. I also used regular chicken broth. Quick, easy, and hard to mess up. I'll definitely make this again.

Puerto Rican Pork Roast

This is absolutely delicious. I usually hate to make pork roast because it's usually so bland but this is wonderful and so easy. I used dried Italian seasoning since I did not have oregano by itself but otherwise made the recipe as is. I also prepared it the night before and let it marinate in the fridge overnight. I covered it with foil at the beginning to avoid the meat browning before it was cooked. Once, it was cooked, I removed the foil to brown it. It was delicious, well seasoned, and moist.

Smothered Filet Mignon

This is a fabulous, elegant dish that is very easy to prepare. I omitted the blue cheese since I don't care for it and also the sugar since balsamic vinegar is sweet enough for me.

Chickpea Cauliflower Curry

This is a very tasty recipe once I adjusted the seasoning to my taste. Like the other reviewers, I also had to add more liquid. Otherwise a good recipe with lots of potential.

Carolina BBQ

The pork was not bad but like another reviewer said, the meat was a little bland. Also, the sauce was not very good. We had to doctor it up a bit to get it to taste just OK. Overall, the pulled pork is good. Just use a different sauce.

Crispy Jalapeno Honey Chicken with Tomato-Corn Confetti

This is one of the best fried chicken recipes I have tried. It comes out perfect every time. The honey flavor is not very pronounced but that did not detract from the taste for me. You also have to monitor the heat a bit more closely since it tends to brown faster because of the honey.

Moroccan Chicken and Whole Grain Couscous

This is an easy and delicious recipe. I made a few changes and it still turned out fabulously. I was out of cloves so I substituted allspice. I used about 4 chopped fresh tomatoes instead of canned and omitted the chicken broth, zucchini, and carrots. I also used whole skinless chicken thighs since I don't care for white meat. This is a wonderful, rich, and warming stew that is great served with a dollop of sour cream.

Pizza Without the Red Sauce

I think this is the best pizza that I have ever eaten. I made this using the Whole Wheat and Honey Pizza Dough recipe. I was skeptical because I am a red sauce girl but this pizza was so flavorful, I did not miss the traditional red sauce at all. The sauce is very flavorful but doesn't overpower the other toppings. Its heavy on the garlic so be prepared for the resulting dragon breath.

Whole Wheat and Honey Pizza Dough

This crust is delicious. I have been spending way too much money on South Beach Diet Pizza and decided to make my own. This recipe is a great substitute and its easy to prepare. I split the dough into 6 individual pizzas and prebaked each for 5 minutes. I froze 5 of them and finished baking one of the crusts using the "Pizza with no red sauce" recipe toppings. Absolutely fabulous!

Low Sugar Oatmeal Raisin Cookie

Very rich and delicious cookies. I substituted 1/2 cup of crystalline fructose for the artificial sweetener and the brown sugar. It was still perfectly sweet. I also used 3/4 cup of whole wheat pastry flour in place of the all purpose flour. Will definitely make again.
