Sarah's Banana Bread Muffins

Easy and delicious. I took the advice of previous reviewers and halved the sugar. The second time I made this, I doubled the nuts. Delicious both ways. Baking time 30 mins.

Butternut Squash Bisque

Easy and good. I subbed curry powder for nutmeg and added a small pinch of rosemary. I also did the roast-the-squash-first trick in the microwave. My 2+ lb squash needed about 15 mins in the microwave.

Roasted Cauliflower and Leek Soup

Easy and delicious. I halved the recipe since my CSA box only came with one leek. Near the end, after adding the spices, I took my immerson blender to the larger chunks of cauliflower to smooth out the soup and make it more "soupy". This is a pretty thick soup and you could stretch it a bit by doing more water or broth if you need to. Both the favors of the cauliflower and leeks were on display.

Delicious! I was skeptical this ws going to actually taste like Ethiopian dishes I get in the restaurant since it doesn't call for Berber seasonings, but it does! Thank you!

West African Peanut Stew

I made this vegetarian style (no chicken, veggie broth), with curly kale instead of collards and it was amazing. We had it over white rice which held it together very nicely.

Best Ever Split Pea

Very good and very easy. I made it with veggie broth and omitted celery (blech). I used Italian seasoning and an equal amount of curry powder too.

Microwave Baked Potato

Works! I wrap mine with a damp napkin. I wanted to cook 2 potatoes but didn't want to wait 20 minutes (god forbid) so I had to experiment. I did the recipe as stated then put them in for 2 more minutes in the 3rd microwave ride. Tastes like baked potato to me!

Alicia's Aloo Gobi

Left out the salt and cinnamon. Used a tsp instead of a tbsp of cayenne. I figured that those who like more spice can always add more later. Used one tbsp of garam masala. I think it was too smokey though and I'd cut it down to 2 tsp next time. Also, I added half a bell pepper for more color.

Delicious. I read a bunch of reviews and made the following changes: double everything from carrots to basil, use broth instead of water, and use balsamic vinegar for the vinegar. Also added more spinach.

Oatmeal Raisin Cookies I

Great recipe. I read a bunch of the reviews and added 1/2 tsp baking powder, added 1/4 c extra flour, a little less sugar, more cinnamon, and used coconut oil instead of butter (personal preference). They were slightly fluffy, chewy and very addictive. Oh, I also soaked the raisins in hot water to plump them up. Thanks for all the reviews guys!

Red Lentil Curry

Super easy and cheap to make a large meal for many. I could only find red thai curry paste and it was fine. I also used chopped or diced tomatoes instead of tomato puree, though I usually use the huge 28 oz can. It's delicious. We usually have this over rice.

Corn Bread Loaf

Great and very easy recipe. We only had polenta on hand so we used that and used 1 1/2 tbs coconut oil instead of shortening. Turned out really good with just the lightest whiff of coconut :D

Lemon-Pepper Salmon II

Incredibly easy and delicious. I've made this a few times. Once, I ran out of soy sauce and had to use teriyaki instead. Amazing. Great with mashed potatoes or couscous on the side with steamed broccoli or green beans.
