Uncle Jon's Watermelon Salsa

Loved it! Was unsure about the use of vinegar vs lime juice, but the combination with the sweetness of the watermelon was very tasty. I used red onion instead of white, and added some red/green pepper. The amount of liquid is a lot even though I let the chopped watermelon drain in a colander. Will make again and use a slotted spoon for serving.

Slow Cooker Cheesy Chicken and Tortillas

Easy to make, but too bland for my taste. Needs some thing such as green chilis or some scallions to spruce it up. We added hot sauce to give it some umph.

Crunchy Chicken Nuggets

This recipe did not work for me. I found the season/cereal mixture did not stick to the meat well. The seasons separated from the mixture and did not coat the chicken. I tried leaving the cereal whole and crushing the cereal which made no difference. When baking it, the coating was mushy and peeled off when flipping. It never seemed to get golden and crispy. I would suggest seasoning chicken 1st and then coat w/ cereal. Prefer Planet Hollywood's captain crunch chicken recipe better.

Bold and Spicy Steak with Chipotle Butter

I accidentally added all of the chilies in the marinade, but it did not make the meat too spicy. The HOT dipping sauce is what my husband and I loved, as it was what gave the meat its flavor. I finely chopped the chilies, but next time I will puree to make more of smooth mixture for dipping.

Slow-Cooker Posole

Loved it! Followed the recipe, but sliced the meat in medallion pieces rather than in chunks. I have 3 young ones and only one ate everything. The meat was tasty however, the sauce is what was too spicy for the other two kids. Served with fried plantains and will definitely be making this again.

Chicken Tikka Kabobs

This was a fairly good recipe. Everyone enjoyed it even my three young kids ate all of it and that says alot. I substituted sour cream for the yogurt, ketchup for the tomato sauce, and added minced garlic. I reserved some of the sauce for dipping which helped enhance the flavor of the chicken.

Slow-Cooked Flank Steak

My family and I loved this recipe for its simplicity and taste. I did not have chili peppers so I used chipotle chile pepper spice, added chopped garlic cloves, used red wine vinegar, and used beef broth instead of water. I followed the advice of other reviewers and only cooked it for 3 1/2 hrs and the meat was perfect. It was even more flavorful the next day and we used it in wraps with rice.

Cheddar Beef Enchiladas

Easy to make and great tasting. Added onions and garlic to ground beef mixture, used canned black beans, and topped with sou cream. Kids loved it and husband and I added jarred jalapeno slices for extra kick.

Enjoyed this easy recipe. Used sour cream and dry cilantro and both worked well for this recipe. However, fresh cilantro would have had a stronger flavor. Will make this again.

Rosemary Garlic Rub

Used this on filet mignon and husband and I loved the flavors. I followed the recipe except I decreased the amount of salt (reg table salt)to only a 1/2 tsp and that was plenty for me and I am salt lover. I also pureed( dried roemary doesn't taste good grilled & the kids don't like it crunchy) the mixture and basted while grilling. This recipe is a keeper.

Paprika Pork Chops

Great pork chop recipe.I wasn't sure about the combo of flavors, but it was very good. My young kids wanted saurkraut and onions taken off, but my husband and I loved it. I browned the chops in the pan after carmelizing the onions instead of broiling. Will make again.

I don't like using bottled marinades, but this was very flavorful. I didn't have garlic powder w/parsley so I substituted a tsp of each and marinaded overnight. Will make this again.
