Slow Cooker Corn Chowder
I saw this recipe in my email this morning as the recipe of the day. Not knowing what to cook for dinner, I thought...great I have all those ingredients...I'll give it a go. In 20 minutes I had it in the crock pot. As others suggested, I added 2 cloves garlic and 4 diced carrots and used chicken broth instead of water. I also used 1 can of corn and 1 can of creamed corn. I added the ham about an hour before serving. I had no evaporated milk, so I added about 1/4 cup skim milk and a fairly large "blob" of sour cream. I added quite a bit of pepper and no additional salt. I also stick blended about 1 1/2 cups of the soup just before serving. Perfect consistency and delicious. Outstanding and will make again. Great way to use a little leftover ham which had been in my freezer since Thanksgiving!! Thank you Donald B

Charleston Breakfast Casserole
I made this for a brunch this a.m. The ladies loved it and all asked for the recipe. I assembled it last evening and refrigerated overnight. Substituted sauteed onions for the pepper and used cheddar and mozzarella cheese. I left out the salt since the bacon,cheese, and croutons seemed to provide more than enough. Baked at 350 for 40 minutes and it was perfect. Thanks for this great recipe-it's a keeper!

Banana Muffins II
My son was home for the weekend and requested banana muffins. I quickly threw this recipe together and they were a huge hit. Quick and easy to make, banana flavor was very strong. They were light and moist as can be. I folded the dry ingredients in just till dampened and did have to bake an extra 10 minutes to make them golden brown on top. Will definitely make these again!!
