Baked Swiss Chicken

Very easy to make, tastes delicious and doesn't have any butter, so it's relatively low fat. I use reduced fat swiss cheese, Campbells Healthy Request condensed Cream of Chicken soup (98% fat free and reduced salt) and the wine option. We've loved it every time!

Frozen Peanut Butter Cheesecake

This pie was delicious! Rich and decadent tasting, and very easy to make. Only change I made was to use a store bought pre-made chocolate crust to cut down the prep time. Can't wait to make it again!

Berry Lemon Mousse Parfait

A refreshing summer treat! Based on other reviewers' feedback, I also omitted the lemon extract and found it plenty lemony. Also substituted powdered sugar for granulated in the lemon whipped cream (personal preference). I upped the recipe to 2 cups of cream (changed other measurements accordingly), and a pint each of blueberries and strawberries and had enough for 5 servings. Next time, I would probably also use less sugar on the berries, since they are plenty sweet.

Hawaiian Chicken Kabobs

Ham and Cheese Pasta Bake

As previous reviewers had done, I also sauteed some sliced mushrooms and onions with garlic and added to (Paul Newman's) marinara sauce. Other than that, followed the recipe to a tee and it was delicious! The pasta nearest the top of the casserole were slightly more al dente than I would prefer, but all in all, this was a tasty, quick and easy dish to make and it pleased the whole family. I will definitely make it again!

Cottage Cheese Chicken Enchiladas

My whole family loved this recipe. I'm not a big fan of super spicy food, so I went lighter on the chiles. I also used flour tortillas rather than corn and it was great!

Oriental Shrimp Noodle Soup

This soup was delightful, with delicate flavors. It was easy, and fairly quick to make (I cut up all the veggies ahead of time). I added some wine (about 1/2 cup), 2 tbs of rice vinegar for a slight sour kick, and some chopped cilantro for added flavor.
