I had major bread anxiety going into this (haven't tried to make bread for about 20 years, and never had any luck back then) but I'm so happy to say I have 3 not only edible but delicious loaves after the 1st try. I used 3 c white all-purpose flour and 2 c white whole wheat flour for the initial 5 cups, and white whole wheat for the remainder. No other changes - just watched the video to make sure I was on the right track! I can't wait to make another batch and try a cinnamon raisin loaf and maybe some dinner rolls.
